After a year and a half on Instagram, I finally decided to launch a Keto YouTube Channel! I'm excited to give you guys some more in-depth looks on my favorite keto recipes, products, and I am going to do some Q&As on my channel too! 

 

For my first 2 videos, I kept it nice and simple and decided to do a video tour of my fridge and freezer and then another video showing my pantry and my "keto corner". I will do these every once and awhile because obviously what's in there is always changing!

KETO PLATED HACK: STEAK STIR-FRY WITH ZUCCHINI, BASIL, MIRACLE RICE AND TOPPED WITH CASHEWS


I credit services like Blue Apron and Plated with really igniting my love of cooking. A few years back I started subscribing to Blue Apron and it really changed my perspective on flavor combinations and opened my eyes to all of the different global flavors I could introduce into my everyday cooking. Fast forward to today, 20 months into my keto way of eating and I am still able to enjoy cooking with these services from time to time. 

What I have discovered is that Plated works the best for me and their recipes often allow me to make a few "Keto Hacks" and turn one of their recipes into something that works for me. There are plenty of weeks when I skip and don't order, just because they are meals I am not interested in or they can't be easily "hacked", but when there are good options I get excited! 

This meal was one of the easiest hacks to date, all I had to do was swap our brown rice with Miracle Rice and I also added bacon grease into the equation:)

I only changed a few things: 

  • I sauteed my zucchini in sesame oil, but also some bacon grease 
  • I also seared the steaks in bacon grease instead of Canola Oil 
  • For the sauce I used my Trader Joe's ginger paste and minced garlic instead of the fresh that came with the meal. 
  • I drizzled Bulletproof Brain Octane Oil on top for more quality fats (I do with this with pretty much everything I cook at home).

These pancakes were wonderful and had a great texture, they had thinly sliced almonds baked into the bottom of them, which was a great surprise! The Chicken Apple Sausage was also really yummy, I was thankful this was portioned out for me because I could have eaten way more than 1 sausage haha. I reheated everything in the microwave per the instructions and then topped them with Kerrygold butter and Walden Farms syrup. YUM! My daughter and I both loved this one!

KETO RECIPE: STRAWBERRY CHEESECAKE MOUSSE


I love this super easy dessert that any dairy eating, cheesecake loving person will devour! It takes 5 minutes to make and can easily be customized!

 

INGREDIENTS

  • 1 block of Cream Cheese 
  • 1-2 oz of "milk" this can be unsweetened Coconut Milk, Almond Milk, or Heavy Whipping Cream- whatever you have in the house is fine! Today I used Califia Farms Coconut Almond Milk, but usually I use Heavy Whipping Cream. 
  • 1 scoop of Perfect Keto MCT Oil Powder (this ingredient is optional, but justs boosts up the healthy fats even more and is flavorless)
  • 2 packets of Stevia, I like the Whole Earth brand
  • 1 tsp of Vanilla Extract (or more, just add to taste)
  • 6 Strawberries
    • You could also use a handful of blackberries or raspberries instead

DIRECTIONS

Put the first 5 ingredients into the food processor. I break up the cream cheese block with my fingers so that it is evenly distributed around the blade. I also set the cream cheese out for 20 minutes or so on the counter before I work with it. The "milk" will help thin out the cream cheese and make everything combine better. Turn on the food processor and let everything mix together. I usually stir twice with a small rubber scraper to make sure everything is mixed well. 

 

Then slice up 4 strawberries and place them in the food processor with the cheesecake mixture. Again mix until combined and use rubber scraper to incorporate everything. 

 

Divide strawberry cheesecake mixture into vessels. This will make 2 larger dessert servings, or 4 smaller. Then I like to slice up the remaining 2 strawberries and put them on top. You can eat this right away or chill it for an hour before eating, it is delicious either way! 

 

You can customize this dessert in so many ways! I have added lemon zest before which adds a nice freshness!

KETO PIZZA OPTIONS!


Who doesn't love pizza? It's just one of those comfort foods that everyone loves. Luckily there are a few different ways to get your pizza fix on keto! 

 

1. LOW CARB TORTILLA PIZZA

This is the pizza that I make the most because it is so quick and so simple! Plus my daughter loves them, so after late volleyball practices this is one of our go to meals! 

 

I simply heat up olive oil in a skillet at medium high heat, put the tortilla down, spread a little tomato sauce down, then shredded mozzarella, then seasoning (Italian or whatever you like), then put your toppings down, then I like to finish it off with a little grated Parm.

2. FAT HEAD PIZZA

Fat Head is a classic Keto pizza crust, you use shredded mozzarella cheese and almond flour and cream cheese to make the crust. You bake that first and then put the toppings in and pop it back in the oven.

Some people also like cauliflower crust pizza, but while I love cauliflower and I love pizza I DO NOT love cauliflower pizza crust. It's just not for me, but you can google plenty of recipes!

3. SKILLET PIZZA

The skillet pizza is the same as the tortilla pizza except, NO TORTILLA! You just crisp up the bottom of the cheese until it browns and holds the whole thing together. I usually leave the tomato sauce off of this one, but you can add it, just put the cheese down first until it melts. Click HERE for recipe.
