There are so many amazing low carb and keto bloggers out there and Peace, Love and Low Carb is one of them! Every year for Halloween my work has a chili cook off, last year I skipped it, but this year I wanted to make a keto chili for everyone to try. I searched on Pinterest and Peace, Love and Low Carb's recipe was one of the ones that popped up! Her recipes always look delicious, so I knew it would be great. In her write up she recommended pairing the chili with her Cheddar, Jalapeño and Bacon Biscuits, so I made those too!
I doubled the recipes so that I could bring some to work and have some at home. The only ingredient I substituted was the bay leaf, I thought I had some at home, but turned out I didn't so I just added some oregano instead. Also I had never used pickled jalapeños before, so I almost subbed those for fresh, but I decided to make it the way she intended and I'm so glad I did! They definitely add a KICK! They have the seeds in them, so if you like spice, you will love it. If you are not a big fan of spice, you may want to separate the seeds out.
Normally I try to avoid eating a lot of tomatoes and onions because nightshades and I don't get along very well. So this is not a meal I would make very often at home, but since this was mostly for work, I didn't worry about it. But if I ate this regularly the joints in my hands would be screaming! I am super sensitive to them though.
