WHERE DO YOU LIVE?
TELL US ABOUT YOURSELF:
I’m 25, have a masters in Forensic Linguistics (don’t worry, nobody else knows what it is, either), and getting back into the swing of things after grad school! I love reading, crocheting, and finding more cute dogs to follow on instagram. My bf is a fellow keto-er and together we’ve lost over 250 pounds! We’re long distance and he’s the best <3
YOUR KETO JOURNEY:
HOW LONG HAVE YOU BEEN KETO?
Almost exactly 3 years! I started Keto on March 6, 2014
HOW DID YOU COME TO THE KETO WAY OF EATING?
I was scrolling through /r/all on reddit and saw a transformation post of a woman who’d lost a ton of weight on keto, and she had really similar body stats to me. Similar height, weight, and proportions - and I just figured, “If she can do it, so can I!”
WHAT KIND OF RESULTS HAVE YOU GOTTEN FROM EATING KETO?
Well, I’ve lost almost 100 pounds, so there’s that! But I’ve also essentially cured my crazy sleep disorder, totally eliminated any heartburn, lowered my resting heart rate by a good 25 beats per minute, lowered my blood pressure to normal levels, and keto really helps deal with my chronic hives. I also just feel so much better and energetic when I’m on keto! I really feel crappy after too many carbs.
HAVE YOU HAD ANY SETBACKS OR CHALLENGES IN YOUR KETO JOURNEY?
Ohhhh yes. I was put on a medication that really messed with me, and 2015 was essentially one big long stall because I couldn’t control my eating urges. I’d eat pretty well all day, then break and eat ¾ cup of peanut butter in one sitting. It was a really rough year. But I got off that med, onto one that works for me, and starting losing again!
LET'S TALK ABOUT FOOD!
WHAT ARE A COUPLE OF YOUR GO-TO KETO MEALS?
Taco salad for sure! Also crack slaw, hard boiled eggs, and lately I’m totally obsessed with unsweetened vanilla almond milk.
WHAT ARE SOME OF THE KETO ESSENTIALS YOU ALWAYS HAVE ON YOUR GROCERY LIST?
Romaine lettuce, baby spinach, 80% lean ground beef, unsweetened vanilla almond milk, chicken thighs (bone in + skin on, or boneless + skinless, depending on my mood), heavy cream, Daisy sour cream, cheese, and lunch meat!
WHAT SITES, BLOGS, IG PAGES, FACEBOOK GROUPS, ETC… DO YOU GO TO FOR INFORMATION AND/OR INSPIRATION?
Reddit.com/r/keto, peaceloveandlowcarb.com, ibreatheimhungry.com, ruled.me, pinterest, and all my wonderful keto friends on instagram!
WHAT ARE THE TOP 3 TIPS YOU WOULD GIVE TO A KETO NEWBIE?
1. EAT MORE SALT. You think you’re getting enough salt? You’re probably not! Track it on MyFitness Pal to see how you’re doing - 3,500mg is the lower end of ‘good.’ I aim for 6,000mg and feel WAY better! When I don’t have enough salt, I get dizzy and gross-feeling REALLY fast.
2. Don’t force yourself to eat all your calories if you’re not hungry. When I first started, I struggled to get to 1300 calories a day (was aiming for 1700) because I just got so full from all the fat - and that’s ok, because I had 100+ pounds to lose. You don’t *need* a fat bomb to finish your day. If you’re not hungry, don’t eat!
3. Try to limit processed foods while you adjust. If you’re eating Quest bars and low carb tortillas (both things I love!) for every meal, you’re going to have a hard time. Figure out how to eat REAL foods first, then add in the sneakier tricks once you’re comfortable
YOU CAN ONLY EAT 5 KETO APPROVED FOODS FOR THE REST OF YOUR LIFE, WHAT ARE THEY?
Does coffee count as a food? If yes, then coffee!
- ground beef
- almond milk
- and BUTTER!
EXERCISE! DO YOU DO IT?!
DO YOU EXERCISE IN ADDITION TO YOUR KETO WOE? IF SO WHAT IS YOUR WORKOUT PLAN AND WHAT HAVE YOU FOUND TO BE MOST SUCCESSFUL?
Yep! I barely exercised the first year of keto - I didn’t take my first yoga class until I was 50lbs down. All I did was walk to and from school and do errands (I lived in NY at the time, so walking was a must). I joined a gym last June to get more serious about exercise now that I’m out of school, and I’m currently following the Ketogains 5x5 program! I love it! I used to be a TOTAL cardio queen (hello, my username is a play on the elliptical… my favorite machine!) but now I love lifting. I really want to squat my body weight by the end of this year. Cardio was more effective for pure weight loss, but I’m loving the changes in my body from lifting.
DO YOU TAKE ANY SUPPLEMENTS, IF SO WHICH ONES?
I take biotin (10,000mcg from Amazon - the heavy duty stuff!), potassium, magnesium, a multivitamin, 5,000iU vitamin D, and I’m experimenting with taking glutamine.
WILL YOU SHARE ONE OF YOUR FAVORITE KETO RECIPES WITH US?!
NomNomPaleo’s cracklin chicken thighs, for sure! I never make my skin-on thighs any other way! Here is the recipe!
