A couple weeks ago I asked my lovely Instagram followers for ideas of what to do with my can of coconut milk. All kinds of amazing ideas came in and one of them was Chia Pudding, which I had never eaten before. So I headed to Trader Joe’s and picked up some Chia seeds and got to work!


In a bowl I mixed:

1 can of Trader Joe’s Organic Coconut Milk (comes in a can)

½ cup of Heavy Whipping Cream

4 Stevia packets (I used Truvia)

Capful of vanilla extract

⅓ cup of Trader Joe's Chia Seeds

Then I placed that in my food processor and gave it a good mix until it started to thicken. I will say the first time I tried to make this I just mixed it with a whisk in a bowl and then put it in the fridge, assuming it would thicken up- it did not. So I would say using a food processor (or blender) is a must!


Once thickened I added a handful or so of Organic Blackberries and mixed those all the way through until everything was purple.


I placed the thickened mixture into containers and let them sit overnight in my fridge so my daughter could enjoy the next morning for breakfast!

The blackberry, in my opinion makes a big difference. Especially if you are not a huge coconut fan, like my daughter and I. It is very rich, I don’t eat breakfast but I had a couple spoonfuls one night for dessert. But it gives my daughter lots of yummy, healthy fats to start her day. I am sure it would be good with strawberries instead of blackberries too!
