I'm 26 years old and engaged (wedding is January 28!) to a wonderful man who is also following a keto lifestyle! I'm a graphic designer by day (and sometimes by night). I am a newly converted cat lover thanks to our adorable feline companion, Leia.

HOW DID YOU COME TO THE KETO WAY OF EATING?
By chance! My friend ate keto a few years ago and I thought she was crazy. I was fed up with my recent weight gain so I figured I'd try the “crazy” way of eating. I read of a lot of successes on Reddit which also helped make my decision.
WHAT KIND OF RESULTS HAVE YOU GOTTEN FROM EATING KETO?
Amazing ones! The initial weight loss was wonderful but it's changed my life in other ways. I no longer feel like a slave to hunger or worried about the next meal. This is the first time I've lost weight without obsessively counting calories. I finally feel in tune with my body, thanks to the healing properties of good old fat. Who knew?!
HAVE YOU HAD ANY SETBACKS OR CHALLENGES IN YOUR KETO JOURNEY?
My weight has stalled here and there which can be discouraging. I implemented a carb night once a week after reading The Carb Nite solution which can be controversial by some keto standards. I feel it keeps me sane and allows me to heal my rocky relationship with food. I eat these foods that aren’t keto approved one night a week, then I go back to keto the next day. This keeps me from obsessing or demonizing foods. An additional benefit is that it keeps my keto rash away. It’s always discouraging when that flares up (like when I tried intermittent fasting) because nobody likes to be itchy! The only remedy I've found that works is eating carbs.

WHAT ARE A COUPLE OF YOUR GO-TO KETO MEALS?
The basics: bacon and eggs, salads, wings, bunless burgers, bulletproof coffee on weekend mornings.
WHAT ARE SOME OF THE KETO ESSENTIALS YOU ALWAYS HAVE ON YOUR GROCERY LIST?
Kerrygold butter, MCT oil, heavy cream, bacon, magnesium supplements, cheese, coconut oil, almond & coconut flour
WHAT SITES, BLOGS, IG PAGES, FACEBOOK GROUPS, ETC… DO YOU GO TO FOR INFORMATION AND/OR INSPIRATION?
WHAT ARE THE TOP 3 TIPS YOU WOULD GIVE TO A KETO NEWBIE?
- Drink all the water! Seriously, I have always drank a lot and I had to majorly up my intake
- Make sure you're eating enough fat! It's a high fat diet, not high protein. Add butter and healthy oils to everything
- Focus on what you CAN eat, not what you can't! I never thought a way of eating would endorse butter, bacon and cheese, so focus on that excitement

Bacon, coffee, cream cheese waffles, wings and roasted Brussels sprouts
EXERCISE! DO YOU DO IT?!
DO YOU EXERCISE IN ADDITION TO YOUR KETO WOE? IF SO WHAT IS YOUR WORKOUT PLAN AND WHAT HAVE YOU FOUND TO BE MOST SUCCESSFUL?
I just started about a month ago! All of my weight loss was strictly diet. I'm still trying to figure out what types of exercise work best for my body with my trainer. I tend to build muscle easily but hold onto fat so that's my current challenge.
DO YOU TAKE ANY SUPPLEMENTS, IF SO WHICH ONES?
Magnesium, a multivitamin, and probiotics every day. I have a whole cabinet of others but I only take them periodically.
WILL YOU SHARE ONE OF YOUR FAVORITE KETO RECIPES WITH US?!
I love making cauliflower rice casseroles with whatever leftover bits I can find in the fridge! I have two methods of making it based on how lazy I'm feeling. The quickest method is microwaving pre-riced cauliflower until it's almost done, then adding a couple tablespoons of butter and cream cheese and microwaving it all together until it's mixable. Then I add heavy cream and whatever shredded cheese I have on hand (cheddar, mozzarella, etc), seasonings, and mix in other goodies like bacon, leftover carnitas, etc. My favorite recipes are not really recipes, just utilizing what I can find in my fridge and making somethings delicious and keto-friendly.
ANYTHING ELSE YOU WANT TO SHARE?
I just love the keto community! I've never felt so welcome and never dreamed anybody would care what foods I'm eating. I created my instagram for accountability and for me to keep track of foods I've eaten but it's helped me much more than that. I'm so encouraged by everyone’s successes with keto!
