I am originally from Orlando, FL and have lived in SC for roughly 11 years now. I’m 32 years old and currently work for a real estate company, but hope to soon be completely self employed with my sauce business! My fiancé, Matthew and I have been together for 4 years and are getting married this November! We have 3 cats and 1 adorable dog name Diggle. My hobbies include crocheting and just about anything craft related. I suppose cooking could be considered a hobby too. Its definitely my passion!

HOW LONG HAVE YOU BEEN KETO?
Going on 4 years now!
HOW DID YOU COME TO THE KETO WAY OF EATING?
A good friend of mine was doing keto and was having really amazing results, so I decided to give it a try myself!
WHAT KIND OF RESULTS HAVE YOU GOTTEN FROM EATING KETO?
When I first started keto I wasn’t aware of the effects that it would have on my PCOS. Since “going” keto all of my PCOS symptoms have gone away! I have normal monthly periods now, as opposed to only having 2-3 a year like I did all my life. I have lost a total of 45lbs but have bounced around 15 of it for the last few months due to some medications. Keto has definitely changed my entire outlook on food and what I put in my body. It has changed my life!
HAVE YOU HAD ANY SETBACKS OR CHALLENGES IN YOUR KETO JOURNEY?
Absolutely! Sticking to any sort of “diet” will always be hard, I don’t care who you are and what you say haha no one is perfect. You are going to have those days that can only be cured by a cheeseburger or a milkshake. Those are my two weaknesses! But the keto way of eating is the easiest lifestyle that I’ve actually been able to stick to and have lasting results.

WHAT ARE A COUPLE OF YOUR GO-TO KETO MEALS?
Hmmm the meals I find myself making a lot are Taco Salads, grilled pork chops, anything with Alfredo sauce and bunless burgers!
WHAT ARE SOME OF THE KETO ESSENTIALS YOU ALWAYS HAVE ON YOUR GROCERY LIST?
My core items that I always buy are :
- Ground beef
- Chicken breast
- Pork chops
- Sour cream
- Cream cheese
- Shredded cheese
- Heavy whipping cream
- Pork rinds
- Coconut oil
- Kerrygold butter!
WHAT SITES, BLOGS, IG PAGES, FACEBOOK GROUPS, ETC… DO YOU GO TO FOR INFORMATION AND/OR INSPIRATION?

WHAT ARE THE TOP 3 TIPS YOU WOULD GIVE TO A KETO NEWBIE?
- Keep it simple, as to not overwhelm yourself; stick to basic meals.
- When you start to feel like crap from the keto flu, push through! Do not give up! Drink pickle juice and be happy that you feel crappy! It means what you’re doing is working!
- Make sure to take a lot of pictures and measurements! Because you will have weeks/months when the scale won’t budge, but you will be losing inches!
YOU CAN ONLY EAT 5 KETO APPROVED FOODS FOR THE REST OF YOUR LIFE, WHAT ARE THEY?
- Sweet and sour chicken
- Srirachoy Chicken (shameless plug there haha but still totally serious)
- BACON of course
EXERCISE! DO YOU DO IT?!
DO YOU EXERCISE IN ADDITION TO YOUR KETO WOE? IF SO WHAT IS YOUR WORKOUT PLAN AND WHAT HAVE YOU FOUND TO BE MOST SUCCESSFUL?
For the first 1-2 years I did not work out. I was active but I didn’t have a regimen. Last year I went to the gym for 4 months straight and completely burned myself out. For now I am just focusing on my food intake, but want to get back in the gym before my wedding!
DO YOU TAKE ANY SUPPLEMENTS, IF SO WHICH ONES?
I take magnesium tablets and biotin!
WILL YOU SHARE ONE OF YOUR FAVORITE KETO RECIPES WITH US?!
SPAGHETTI SQUASH CHICKEN POPPER CASSEROLE
What you will need:
- 1 spaghetti squash
- 4oz cream cheese
- 1 egg
- Diced chicken (roughly two cups)
- Jalapeños (amount to your liking)
- 1 cup shredded cheddar
Start by preheating your oven to 400. Cut your squash in half, long ways and place cut side down on a greased baking sheet. (I like to use bacon grease on mine, it gives it an UHmazing flavor). Cook your squash for 50 mins! When it’s done scrape out the halves with a fork and add to a baking dish.
Lower oven temp to 350. Mix in your cream cheese, egg, salt and pepper, chicken and half of the cheddar into the squash. Stir until creamy. (It helps to beat the egg first before adding it). Top with remaining cheese and jalapeños! Bake for 35 mins; broil for 2 mins at the end.
It is so hard to describe the flavor of this dish. It’s a combination of Mac and cheese, a pot pie and jalapeño poppers. It just too damn delicious for a description!!!! Just try it! I promise you will love it! ️
