I love the New Hope Mills Low Carb Pancake & Waffle Mix it creates perfect waffles and pancakes with the same texture as full carb versions. I usually make the whole box at once when I make waffles because they heat up really well. So for a whole box of mix you add in 8 eggs (Vital Farms Pasture Raised Eggs), 4tbsp of KerryGold Grass-Fed Butter, and 1 and 1/3 cup of cold, bottled water. I also add in cinnamon, nutmeg and vanilla- I don't measure, just sprinkle some in. Then because I am a blueberry fiend I add those into 1/2 the mix, but my daughter likes them plain.
Then get your waffle iron (or griddle) nice and hot, spray it down with coconut oil after each waffle and watch them get perfectly fluffy! Then top with more KerryGold Butter and Walden Farms Sugar Free Syrup.
The whole box made 7 waffles for me. Each waffle is a bit under 5g of net carbs. I take the extras and wrap them individually in aluminum foil, then when I want to reheat them I just pop them in the foil into the oven.
The mix is not gluten-free, which is unfortunate because before I was Keto I was GF, but I have to say I have never had any issues with this mix.
