WHERE DO YOU LIVE?
TELL US ABOUT YOURSELF:
I’m 28 and as single as they come. I love my family and I couldn't ask for a more supportive mother, father or older brother! I am a very happy “dog mom” to one 90 lb lump of puppy love named Lyla Grace, I do everything for her! I have a sedentary desk job as a receptionist and I like to volunteer in my community through a local Rotary club.
As far as hobbies go I like to read, draw, play PS4, cook, write, and create recipe videos for my YouTube channel!
YOUR KETO JOURNEY:
HOW LONG HAVE YOU BEEN KETO?
2 years (800+ days according to MFP)
HOW DID YOU COME TO THE KETO WAY OF EATING?
I found the reddit Keto community after seeing some success stories on r/progresspics.In turn reading the discussions of the ladies over in r/xxketo led me to diagnosing my PCOS, which has been the biggest help in turning my health around. (Shoutout to r/xxketo for being my rock!)
WHAT KIND OF RESULTS HAVE YOU GOTTEN FROM EATING KETO?
I originally lost 60 lbs in my first year of Keto but after a bad year of stress eating I’m currently at 34 lbs lost. (I’m not perfect) The biggest improvement for me has actually been in my PCOS symptoms and for that I’ll always be grateful for finding Keto.
HAVE YOU HAD ANY SETBACKS OR CHALLENGES IN YOUR KETO JOURNEY?
Yes! After a VERY successful first year I got complacent and slowly slipped back into my previous bad habits. I have a history of binge eating / stress eating and after losing all 4 of my grandparents within 5 months at the beginning of 2016 I let it get the best of me. I’m currently back on track and working through my relationship with food one day at a time.
LET'S TALK ABOUT FOOD!
WHAT ARE A COUPLE OF YOUR GO-TO KETO MEALS?
Bunless burgers, skillet pizzas, chili, zoodles, and anything bbq would have to be my top 5!
WHAT ARE SOME OF THE KETO ESSENTIALS YOU ALWAYS HAVE ON YOUR GROCERY LIST?
Eggs, bacon, chicken thighs, zucchini, real butter, pork rinds, coffee!, broccoli, cheese, whole milk greek yogurt, heavy cream, meat snack sticks, almonds, tuna, Swerve, pepperoni, and basically whatever protein is on sale. Mostly protein and veggies!
WHAT SITES, BLOGS, IG PAGES, FACEBOOK GROUPS, ETC… DO YOU GO TO FOR INFORMATION AND/OR INSPIRATION?
For recipes I love
- http://meatfreeketo.com/ - She has a lot of baking recipes that are almond flour free, large amounts of almond flour give me a stomach ache.
I follow A LOT of people on Instagram, the community is fantastic, but I’m always happy to see updates from:
... to name a few! There’s really tooo many to name them all.
WHAT ARE THE TOP 3 TIPS YOU WOULD GIVE TO A KETO NEWBIE?
- Water, water, water! Don’t underestimate the importance of hydration.
- Manage your electrolytes, “keto flu” is completely avoidable!!! If you don’t get enough sodium, magnesium, and potassium in your daily diet you're going to have a bad time. 9/10 if you feel gross you’re electrolytes are off.
- Maltitol and things sweetened with maltitol are not your friend! The g.i. distress it can cause is bad enough, but for some it can spike insulin similar to regular sugar. As someone who has insulin resistance it’s definitely something I now avoid.
YOU CAN ONLY EAT 5 KETO APPROVED FOODS FOR THE REST OF YOUR LIFE, WHAT ARE THEY?
- chicken thigh
- butter. (as long as seasonings are still an option, lol)
EXERCISE! DO YOU DO IT?!
DO YOU EXERCISE IN ADDITION TO YOUR KETO WOE? IF SO WHAT IS YOUR WORKOUT PLAN AND WHAT HAVE YOU FOUND TO BE MOST SUCCESSFUL?
I did not exercise the first year I was on Keto and lost most of my weight without the assistance of exercise. I did take up C25K last January and now I love to run with my dog Lyla Grace, it’s a great way to get some mental clarity and the bonding time with my pup is the best! I’ve also recently started working with weights to help tone / build muscle, I have a simple routine I started after working with the free trainer at my local Planet fitness. I work on building muscle in a bad knee, strengthening my core to improve my overall running experience, and arm strength since I have the upper arm strength of a small child...
DO YOU TAKE ANY SUPPLEMENTS, IF SO WHICH ONES?
The only thing I take that could be called a supplement might be Natural Calm in the raspberry lemon flavor, I mostly use it 2 hours before bed to get restful sleep and it helps prevent leg cramps on heavy exercise days.
WILL YOU SHARE ONE OF YOUR FAVORITE KETO RECIPES WITH US?!
PAN FRIED & FULLY LOADED RADISHES
You will never look at a radish the same after trying this. This recipe is my go to comfort food and it definitely feels like an indulgence. The way the hot radishes absorb the flavor from the bacon drippings is unreal and adding the cheese, sour cream, hot sauce, bacon & green onion makes it feel like a food sin! Original post with recipe can be found here.
