YOUR KETO JOURNEY:
YOUR BUSINESS IS BASED ON THE PALEO LIFESTYLE, SO WHAT MADE YOU GO KETO INSTEAD?
For me it’s not choosing between the two, for me they’re connected! I’m on Keto, but also Paleo at the same time, so I don’t consume dairy or legumes or artificial sweeteners or coffee, and I make sure all the animal products I consume are from a sustainable source, Organic, Free Range and Non-GMO fed! I wouldn’t recommend Keto to all my clients, as some people without prior metabolic damage have a higher tolerance to carbs (starchy vegetables such as squash, parsnips and sweet potatoes), so a higher carb Paleo diet is better for them. Keto is very strict and some people don’t have the mentality to stick to it long term. If that’s the case, don’t do it as it may cause more damage than healing. Healing being the key word here.

Just over 2 years.
HOW DID YOU COME TO THE KETO WAY OF EATING?
Stephanie Person was the one who introduced me to it in 2014 through her YouTube Videos. To this day she’s my biggest mentor and inspiration. I admit when I first saw one of her videos, I thought she was crazy. All brilliant people seem crazy, at first. I was already following the Paleo Diet due to being diagnosed with IBS and food intolerances to most grains, including rice and potatoes! I’ve always been fascinated with slowing down the ageing process of our cells, preventing disease and being able to build muscle mass and lose bodyfat at the same time, naturally.
WHAT KIND OF RESULTS HAVE YOU GOTTEN FROM EATING KETO?
As a malabsorptive Ectomorph and ex- Leaky Gut a.k.a. IBS sufferer, it’s always been hard for me to gain body mass. I was always so skinny growing up and was discriminated and bullied for it. Finding about healthy eating in the form of Ketosis and Paleo, and Weight Lifting has been the best thing happening to me, for my physical and mental health, as well as my motivation to start my own business in this industry and help other people with similar metabolic diseases and problems! And of course my physical appearance has changed but that’s secondary. People who start Keto just to lose weight are not doing it for the right reason and with the right mindset and are losing their time. Keto is not for the weak minded. If you’re gonna “cheat” or “refeed”, just call it Carb-cycling, which is Dieting. Keto and Paleo are a sustainable Lifestyle.
HAVE YOU HAD ANY SETBACKS OR CHALLENGES IN YOUR KETO JOURNEY?
Not really, I’ve supplemented with electrolytes in the beginning and gradually reduced my carb intake so I didn’t have any big side effects, my energy wasn’t affected and the candida die-off wasn’t as noticeable. Due to being on Paleo for a year prior to starting Keto, and have already stopped consuming sugar, artificial foods and complex carbs, it was relatively easy for me. And I was doing it solely to improve my health. Your health should be your number one priority in life.

WHAT ARE THE TOP TIPS YOU WOULD GIVE TO A KETO NEWBIE?
- Drink tons of water, take electrolytes (Magnesium, Himalayan Sea salt, Potassium)
- Reduce carbs gradually while increasing your fats. You don’t want to shock your body from this drastic change.
- Avoid artificial sweeteners, dairy and coffee. They can stop your adaptation.
- Make sure you exercise in the form of Yoga, Pilates, or Weight lifting. No cardio or hiit in the first few months!

Paleo Eggs Benedict (LCHF, Keto)
makes 2 servings
For the English muffins:
2 Organic Eggs
2/3 Tbsp melted grass-fed butter/ghee
2 Tbsp Organic Coconut Flour by Paleo Lifestyle (Get it HERE)
1 Tbsp Coconut/Almond/Cashew milk
1/2 tsp gluten-free baking powder (if you don’t count baking powder as Paleo approved, use 1/8 tsp baking soda mixed with 1/4 tsp Organic cider vinegar)
pinch of sea salt
For the Hollandaise sauce:
2 Organic egg yolks
1 tsp Dijon mustard
100g unsalted grass-fed butter/ghee
1 Tbsp fresh lemon juice
splash of Organic cider vinegar
sea salt & black pepper to taste
Plus 4 Organic eggs to poach and a packet of Parma Ham/Prosciutto di Parma (preservative free).
Melt the butter for the muffins. Whisk in a bowl with the rest of the muffin ingredients. Split into two 3.5″ ramekins and cook in the microwave on High for 1.5 minutes. Alternatively bake in the oven at 400F/200C for 12-15 mins. Remove carefully from ramekins and slice each in the middle so it makes 4 muffins in total. Toast them in a buttered frying pan, using a turner spatula to press on top lightly, until they’re lightly browned on each side (see above picture). Next, poach the 4 eggs in a pan with simmering (not boiling) water, with 1-2 Tbsp of cider vinegar added to it. Make sure you use fresh eggs (when in the shop, pick the eggs at the far back of the pile). Make the Hollandaise: Melt the butter, Put the egg yolks on a water bath (in a bowl, which is put in a pan of gently simmering (not boiling) water). Whisk in the mustard and lemon juice. Whisking constantly, very slowly pour in the butter until combined (otherwise it will split/separate and won’t mix with the yolks). Whisk in a splash of vinegar and season with sea salt and black pepper. You may need to add a bit of water and mix if it looks curdled. On 2 plates, put two English muffins each, then some Parma ham, then two poached eggs each, then pour the Hollandaise sauce on top. Enjoy while it’s hot!
