Are you having family stay with you this summer? Serving breakfast to guests usually means sweating over an omelet assembly line or buying a bunch of unsatisfying, high-carb muffins and cereals and just letting everyone fend for themselves.
What if, instead, you served a delicious Keto breakfast spread?

FatHead Sausage Breakfast Biscuits
Prep time: 10 minutes
Cook: 15 minutes
- ¾ cup of almond flour
- ¾ cups of shredded mozzarella cheese
- 2 tbsp. of cream cheese
- 1 egg
- 8 cooked sausage patties
- ¼ cup of shredded Colby jack cheese
Preheat oven to 400 degrees.
Make the fat head dough add shredded cheese and cream cheese to a microwavable bowl, microwave on high for 1 minute. Stir the mixture and microwave again for 30 more seconds.
Add the egg, salt, and almond flour to the cheese mixture and mix everything together gently.
If dough is sticky sprinkle it with a little extra almond flour. Wrap dough in plastic wrap and place in refrigerator until firm.
Once dough is firm, divide into 8 balls, you can adjust the size depending on the size of your sausage patties.
Spray muffin tins with nonstick spray and place a dough ball into the bottom of 8 muffin tins.
Add the pre-cooked sausage patty and Colby jack on top of the dough and wrap the dough around both. Add a pinch of additional cheese on top of the biscuit.
Bake breakfast biscuits for 15 minutes or until golden brown.
Variation Tip: You can replace sausage with leftover bacon and you can also add veggies if you wish.
