KETO RECIPE: Mississippi Pot Roast


This is by far one of the easiest dishes to make! I love a slow cooker meal on a busy day. I throw it all in before I go to work and by the time I get home the house smells amazing and the beef shreds in seconds.

 

INGREDIENTS

  • 2lb Chuck Roast

  • 8oz of butter

  • 1 packet of Dry Ranch Dressing

  • 1 packet of Aus Jus Gravy Mix

  • 1 jar of whole Peperoncini

DIRECTIONS

  1. Put the slow cooker on low.

  2. Season the meat with salt and pepper and place it on the bottom of the slow cooker. 

  3. Pour the packets of dry ranch dressing and gravy mix over the meat. 

  4. Place the sticks of butter on top of the meat and seasoning mixes. 

  5. Add the peperonicinis (I don't add the liquid, just the peppers) all around the butter on top of the meat. There will be plenty of liquid from the meat and the butter, no water or broth is needed. 

  6. Let it cook for 8 hours on low. 

  7. Shred beef with 2 forks.

  8. Place shredded beef and peperoncinis in serving dish. Buttery liquid can be used as a gravy, I pour it into a separate container. 



Mississippi pot roast pairs great with cauliflower rice or mashed cauliflower. Sometimes I also put it inside a low carb tortilla like a Mississippi Pot Roast burrito- it is super messy, but yummy!

Keto Cocktails with the Ladies from Boozy Ketones

Is there anything better than Horchata? Well, maybe Horchata Cocktails!

Recently I teamed up with the ladies at Boozy Ketones on Instagram to turn my keto-chata recipe into cocktails. I love that the Boozy Ketones Sisters have dedicated their feed to Keto Cocktails with under 5 grams of Carbs. (And the pictures on their Instagram are stunning!)

We started with my Keto-Chata recipe from The Big Book of Keto and added booze. I love Horchata in the winter time, oddly enough. It is served cold, but the mix of Cinnamon and Vanilla just taste cozy to me.

The Boozy Ketones also shared their Apple Pie Moscow Mule Recipe and their tips to making the perfect Keto Margarita.


Keto-Chata Martini (4 Carbs) by @ketointhecity_ and @boozyKetones

Ingredients

  • 1 1/2 oz Vodka

  • 1/4 cup unsweetened Almond Milk

  • 1/4 cup full fat Coconut Milk

  • 1/2 Tsp. Ground Cinnamon

  • 1/4 Tsp. Vanilla Extract

  • Erythritol to taste

Shake this up with Ice and make it extra fancy with a Cinnamon Stick and Rosemary


The Keto-Chata Russian (4 Carbs) by @ketointhecity_ and @boozyKetones

Ingredients

  • 1 1/2 oz Rum

  • 1/4 cup unsweetened Almond Milk

  • 1/4 cup full fat Coconut Milk

  • 1/2 Tsp. Ground Cinnamon

  • 1/4 Tsp. Vanilla Extract

  • Erythritol to taste

Serve over ice with an Orange Slice, Cloves, Cinnamon, and a sprig of greenery to make it festive.


Apple Pie Moscow Mule (2g Carbs) by @boozyKetones

Ingredients:

  • 1 1/2 oz infused apple pie vodka

  • 1/4 fresh lemon

  • diet ginger beer (Cock n Bull gingerbeer is a favorite).


Fill cup with ice. Add vodka, lemon juice, and ginger beer (We also like to do 1/2 ginger beer 1/2 club soda if we want it more mellow).

To make the apple pie vodka:

Put slices of 1 apple and two cinnamon sticks in a pint sized mason jar, cover with vodka. Let sit for 3 days then strain. All the flavor without all the carbs!


Keto Margarita (4 carbs) by @boozyketones

Ingredients:

  • 1 1/2 oz Tequila

  • 1/2-1 oz eyrithritol simple syrup (tweak for desires sweetness level)

  • 2 oz fresh squeezed lime juice

  • 1/4 tsp orange extract

  • Top with sparkling water (lime La Croix is so good with this)

To sass this up, blend in some blackberries or muddle a spicy jalapeño!

To make the erythritol simple syrup:

heat 1/3 c erythritol and 1 c water in a saucepan until dissolved; cool. 

KETO RECIPE: Cozy 5 Ingredient Keto Soups


It is officially soup season!

Not much is better than a cozy bowl of delicious soup. I have a variety of keto friendly soup recipes in my 2 cookbooks. All are super easy and will please the whole family.

BROCCOLI-CHEESE SOUP

A fat-filled combination of butter, broccoli, heavy whipping cream, chicken broth, and cheddar make this soup filling and delicious. Great for a night when you feel like going meatless, but you could also add crumbled bacon on top if you want some added protein. The easy to find ingredients can be kept on hand anytime for a quick dinner. 4g of net carbs per bowl.

TACO SOUP

This soup has a nice kick from taco seasoning and seasoned tomatoes. The base of the soup is rich and creamy with a mixture of ground beef, beef bone broth and and cream cheese. 5g net carbs per bowl.

KETO RECIPE: Fathead Bagels

Who doesn't love bagels? Luckily, you don't have to give up bagels to live a Ketogenic Lifestyle. Just make them at home! 

This FatHead Dough makes bagels that have the perfect texture and consistency. Today, I kept it simple and topped the bagels off with Everything Seasoning, but you can make any flavor you want. 

Add Jalapeños and cheese on top for a spicy keto snack. Or stuff them with blueberries and top with nut butter for a keto breakfast.

FatHead Bagels  

  • Serves: 6

  • Prep time: 20 minutes

  • Cook: 15 minutes

Ingredients

  • ¾ cup of almond flour

  • ¾ cups of shredded mozzarella cheese

  • 2 tbsp. of cream cheese

  • 1 egg

  • Salt

  • 1 tbsp of Everything Bagel Seasoning

Directions

  1. Preheat oven to 400 degrees.

  2. Make the fat head dough add shredded cheese and cream cheese to a microwavable bowl, microwave on high for 1 minute. Stir the mixture and microwave again for 30 more seconds.

  3. Add the egg, salt, and almond flour to the cheese mixture and mix everything together gently.

  4. If dough is sticky sprinkle it with a little extra almond flour. Wrap dough in plastic wrap and place in refrigerator for 10 minutes to firm up.

  5. Once dough is firm, divide into 6 balls and roll them out into logs.

  6. Spray a donut pan with nonstick spray and wrap dough around the tin. Top with Everything Bagel Seasoning.

  7. Bake the bagel for 15 minutes or until golden brown.

  • Variation: Add pepperoni and jalapeño slices for a spicy alternative.

  •  If you don’t have a donut pan you can place your round “wreaths” of dough onto a cookie sheet with parchment paper or a silicone baking pad. They will just have a flat bottom, so you could make halves.

KETO RECIPE: Cream Cheese & Coconut Flour Pancakes & Waffles

Who doesn't love pancakes and waffles?! I know I do and one of the first keto friendly recipes I experimented with was this one. It's a mixture of eggs, cream cheese, coconut flour and baking powder that makes fluffy, golden pancakes possible on keto.

I used my Cuisinart Pancake Plate today so they were all uniform in size to make cute little pancake stacks. As soon as they come off the griddle I butter them up with Vital Farms Grass-fed and Pasture Raised Butter, my favorite! 

INGREDIENTS

This is two servings and makes 6 pancakes. Just double it, triple it etc... for more people! 

  • 4 pasture raised eggs (I use Vital Farms)

  • 4 oz of softened cream cheese

  • 1 teaspoon of liquid Stevia 

  • 1 tsp of Vanilla extract 

  • 1 1/2 tsp of baking powder

  • 4 tbsp of coconut flour (I used Bob's Red Mill

  • 4 tbsp of butter, divided

  • Sprinkle of cinnamon (I love cinnamon so I am generous) 

DIRECTIONS

  • Put all ingredients in a food processor and mix thoroughly! You could probably also use a bullet or blender. 

  • Heat skillet/griddle to medium high and melt butter on pan 

  • Pour in batter, I made my pancakes about 4" wide

  • They will get puffy when it is time to flip, they won't really get the air bubbles like a typical pancake but they will set. Second side will cook faster. 

  • For waffles, heat your waffle iron, grease it (I use coconut oil spray) and pour in batter
