YOU HAVE TO MAKE THIS!
Trader Joe's Parsnip Chips are a staple in Keto chatter on social media, so I finally got around to buying them! They are delicious! They have a sweetness to them, which made me want to pair them with a creamy dip, which led me to throw together this Avocado dip. It turned out much better than I expected!
HOW TO MAKE IT:
- Place 2 avocados and 2 heaping spoonfuls of sour cream in the food processor and blend them up.
- Then add pepper, pink salt, and Tajin and blend more.
- Add the juice of 1/2 a lime and blend more.
- Finally some chopped fresh cilantro and blend a bit more.
Then add a little more cilantro for presentation and pair with the parsnip chip. YUM!
I had far more dip than chips, so I ate the rest with a spoon. It is THAT GOOD! 😋
