Equip Mirco Greens to the Rescue!

Are you fighting this cold virus that’s going around? Do you just feel gross? Did you substitute Keto Chocolate for Vegetables last week?

My go-to supplement when I feel my body fighting a cold is Micro Greens! Equip's Micro Greens Micronutrient Blend is a just the boost my body needs to fight a cold or get back to the natural balance of things.

Equip's Micro Greens contains 14 servings of raw, organic fruits and vegetables from 22 different sources. All in one scoop!

Equip's method of cold pressing entire plants ensure that you get more phytonutrients than if you ate all of these fruits and veggies, and none of the sugar. In Fact, Equip's Micro Greens counts as my multivitamin for the day providing essential nutrients like zinc, iron, calcium, magnesium, and vitamin A, C, D, E, and K. It also only has 25 calories per servine and 1 gram of net Carbs.

Most days, I just stir a scoop of Equip's Micro Greens in to a glass of water and chug it. If I'm feeling run down, I'll do this in the morning and in the afternoon. The Micro Greens Powder is berry flavored so it's not too bad to chug.

On the few days a week when I make myself a smoothie, I add it in. The texture is a little grainy, but I kind of like that in my smoothies. It goes perfectly into my Blueberry-Coconut Smoothie Recipe

Equip's Micro Greens also adds digestive enzymes, liver support, and fat from coconuts (MCT powder) to Micro Greens to make it easy for your body to process and absorb all of the good stuff!

There are no fillers or common allergens in the Equip's Micro Greens making it one of the cleanest supplements on the market.

Fight off the cold virus this winter by getting all of the micro nutrients your body wants and needs in one easy scoop.

Nui Cookie Bites are an adorable Valentine's Treat

Valentine's day is defined by sweets. They are everywhere! But there's no reason that you can't still enjoy the traditions of the day while staying Keto. Today, I used these cute cookie cutters to make adorable heart shaped cookie bites. I took three different flavors of Nui's amazing Keto Cookies and cut them into heart shapes.

This way, I can enjoy some sweets through out my day with out throwing off my macros. Plus they are really cute and festive.

I never feel like I'm missing out on the sweet things in life because Nui has me covered.

Nui has four regular flavors. Peanut Butter, Chocolate Chip, Snickerdoodle, and Double Chocolate. All of them are amazing. I love cinnamon so I might choose the Snickerdoodle as an overall favorite, but really you can’t go wrong.

They also have some amazing seasonal flavors. Right now, their winter seasonal flavor Ginger Something is 20% off. Get them before they run out by using the code KETOINTHECITY20.

*This code only works for the Ginger Something Cookies! If you are looking to buy the other flavors, scroll down.

Nui Cookies) never let me down. Their consistency and commitment to making the best Keto Cookies is what brings me back. All of the ingredients in Nui cookies are clean and Keto Friendly. They use a combination of almond and coconut flour which keeps the carbs low and also gives the cookies 6g of protein per serving.

They sweeten the cookies only with erythritol, a natural sweetener, and monk fruit extract.

The cookies only have 4g of net carbs per serving. And a serving is two cookies!!!

I really love how cute these little heart shaped bites turned out! I think next time I might dip them in some Keto Whipped Cream or dip them in Keto Chocolate Genache made from Choc Zero Chocolate.

Keto Recipe: Mint Chocolate Chip Smoothie

My grown up blender!

My grown up blender!

I finally got a grown up blender!

I’ve been living this whole time with the cheapest blender available and a super tiny food processor. Finally I decided it was time to be a real adult and now I have a nice big food processor and super amazing Blendtec blender!

I was amazed at the power in this blender and it is super easy to use! The first thing I decided to make was a Mint Chocolate Chip Smoothie for my daughter and I! It’s a take on a recipe I have in my second cookbook, The Big Book of Keto, but it’s a little different. It is such a yummy treat or meal.

Choc Zero Syrups are the perfect topping for any Keto Dessert. I put these low carb syrups on all of my favorite dessert recipes.

And after being sold out for months, Choc Zero finally has my favorite flavors back in stock! Maple Pecan, Chocolate, Caramel, and strawberry syrups are all back! Looks like it's time to bust out my favorite Keto Waffle Recipe this week. Breakfast for Dinner? Yes, Please!

These syrups have been sold out for ages, so order now before they run out!

These syrups go great on everything. With only 1g of net carbs, Choc Zero’s Honest Syrups pack the sweet punch you crave with out any of the sugar. They use only natural flavoring and monk fruit to flavor their low carb syrups. I like to put them on breakfast foods, Keto Ice Cream, Cookies, and even my favorite J and S Sweets! These Keto maple donuts were already good! Add some chocolate syrup to take them to the next level!

They have all sorts of different flavors. They have just restocked the Maple, Maple Pecan, Chocolate, Vanilla, Caramel, Strawberry, and Pumpkin Pie Syrups. Some of them are even 50 cents off! You can drizzle this syrup over Keto Cake, or make these Pumpkin Baby Bundts and top them off with the Maple Pecan syrup.

Choc Zero doesn’t produce a bunch of excess product. That means that they sell out quite often and quickly. These syrups won’t stay in stock for very long, so order yours today.

RECAP OF THE METABOLIC HEALTH SUMMIT 2019

Yay! I’m a Founder! And a Speaker!

Yay! I’m a Founder! And a Speaker!

If you would have told me 3 years ago that I would have been a Keynote Speaker at the Metabolic Health Summit I would have told you you’re crazy! But this keto journey continues to be full of surprises and I was honored to be asked to speak at this year’s event in Long Beach, CA.

I was especially excited because the theme of this year’s conference was Where Keto Science Meets Society. I got to join the brightest minds in the keto science world like legends Dominic D’Agostino and Jeff Volek. Everyone at the event was so excited to connect with other people passionate about the ketogenic diet. I was super excited to meet some of my Instagram friends, some of which I had never met in real life!

It’s showtime, a quick pic before heading to MHS!

It’s showtime, a quick pic before heading to MHS!

My speech was on Saturday and was titled Healing Through Keto: My Autoimmune Journey and it went into detail about my 22 year journey with Psoriatic Arthritis and Psoriasis. I had never spoken in front of 700 people before and it was nerve-racking, but once I got up there it felt great to release my journey and share it with everyone.

I also did a cooking demo where I made my Green Chile Meatballs. It was so fun to share a super easy with everyone and at the end the hotel staff brought out trays of meatballs for everyone to try! It was an amazing experience and I am so grateful to have been included. Once they release video of the speakers I will be sure to share it on here!

Can you keep it keto during food focused celebrations like the Super Bowl?!

Of course you can! I was super excited when the team at Good Morning America reached out and wanted to include some of my recipes in their round up of Whole 30 and Keto Super Bowl Recipes You and Your Guests Will Love.

They shared my Cheese Chips and Guacamole recipe from my newest book Keto In 30 Minutes, as well as my Green Chile Meatballs and Chocolate Chip Cookies from The Big Book of Keto!

CHEESE CHIPS AND GUACAMOLE

INGREDIENTS

1 cup shredded cheese (such as Mexican blend)
1 avocado, mashed
Juice of 1/2 lime
1 teaspoon diced jalapeno
2 tablespoons chopped fresh cilantro leaves
Pink Himalayan salt
Freshly ground black pepper

DIRECTIONS

  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.

  2. Add 1/4 cup mounds of shredded cheese to the pan, leaving plenty of space between them, and bake until the edges are brown and the middles have fully melted, about 7 minutes.

  3. Set the pan on a cooling rack and let the cheese chips cool for 5 minutes. The chips will be floppy when they first come out of the oven but will crisp as they cool.

  4. To make the guacamole, in a medium bowl, mix together the avocado, lime juice, jalapeno and cilantro and season with pink Himalayan salt and pepper.

  5. Top the cheese ships with the guacamole and serve.

INGREDIENTS

1/4 cup unsalted butter
1 1/4 cups almond flour
1/4 teaspoon salt
1/4 cup erythritol
1/4 teaspoon cream of tartar
1 large egg
1 teaspoon vanilla extract
1/4 cup sugar-free chocolate chips

DIRECTIONS

  1. Preheat the oven to 350 degrees F.

  2. Line a baking sheet with parchment paper or a silicone baking mat and set aside.

  3. In a saucepan or in the microwave, melt the butter. Place in a room-temperature container and let it set in the refrigerator for 10 minutes to cool down.

  4. In a large bowl, combine the almond flour, salt, erythritol and cream of tartar. Stir to combine.

  5. In a small bowl, combine the egg, vanilla and cooled butter. Whisk together.

  6. Pour the wet ingredients into the dry ingredients and combine everything together with a large spoon or rubber scraper, then fold in the chocolate chips.

  7. Scoop out 2 to 3 inch mounds of cookie dough and place on the prepared baking sheet. I like to flatten mine a bit.

  8. Bake the cookies for 10 to 12 minutes, until the edges turn golden brown.

  9. Let the cookies cool for 10 to 15 minutes before transferring them to a cooling rack to cool for an additional 15 minutes.

  10. These will make puffy chocolate chip cookies with a chewy center. I absolutely love them cold, so I generally store them in the refrigerator.

I’m so thankful to Good Morning America for sharing healthy options with people and showing how keto can easily (and deliciously) be incorporated into everyday life!
