KETO RECIPE: Blueberry Lemon Cakes

These Keto Blueberry Lemon Cakes are gorgeous and irresistible and keto of course. 

I was so happy with how these turned out. The lemon zest adds just the right amount of freshness . Blueberries are my favorite fruit, and they add an unexpected purple-blue swirl that make these cakes look like a work of art. 

Serve these at a summer brunch or bring them to a friend for a special occasion. These keto cakes deserve to be shown off.

Blueberry Lemon Cakes

INGREDIENTS

  • 2 tablespoons butter, cut into 4 pieces
  • 4 large eggs
  • 4 ounces cream cheese
  • ¼ cup coconut flour
  • ¼ cup sweetener (I use erythritol)
  • 1½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • ¼ cup blueberries, fresh or frozen

DIRECTIONS

1.     Preheat the oven to 425ºF. You can coat your bundt pans with cooking spray if you want, but I don't because the butter you melt in them in the next step keeps them from sticking.

2.     Place the 4 pieces of butter in the baking pan and place in oven for 2 to 3 minutes to melt the butter. Let the butter melt, but make sure it doesn’t brown or burn. Remove from the oven.

3.     In a food processor, mixer or blender, process the eggs, cream cheese, coconut flour, sweetener, baking powder, and lemon zest, until thoroughly combined.

4.     Pour the batter into the baking pan with the melted butter.

5.     Drop the blueberries into the cake, evenly spreading throughout. Be Careful not to add too many blueberries or the bottom of the cake will be mushy. 

6.     Bake for 15 minutes, or until toothpick inserted into the center comes out clean.

7.     Allow bundts to cool on a rack. 

You can serve warm or cooled. I sprinkled confectioners Swerve on top of mine.  

TIP: If the blueberries do cause the top to be a little soft, you can place bundts on a baking sheet and place back in the oven for a few minutes to "dry out" a bit. I did that for these.

KETO RECIPE: Fathead Cinnamon Rolls

Cinnamon Rolls are a special treat in our house. We normally eat them for birthdays or to celebrate a big achievement. My grandma used to make the best cinnamon rolls in the world, so they hold a special place in my heart.After I started keto, I found that I missed this special time with my daughter over a cinnamon roll. 

So I started experimenting with Keto Fathead Dough. Now I know what your'e thinking. Mozzarella cheese in a cinnamon roll? I promise that no one would guess that these aren't regular, carby, cinnamon rolls. This keto recipe is low carb and high in delicious healthy fats. 

This is the same basic Fathead Keto Dough that I use to make my Fathead BagelsFathead Pizza Crust and now Fathead Keto Cinnamon Rolls. 

FatHead Cinnamon Rolls

  • Serves: 6

  • Prep time: 20 minutes

  • Cook: 15 minutes

Ingredients

  • ¾ cup of almond flour

  • ¾ cups of shredded mozzarella cheese

  • 2 tbsp. of cream cheese

  • 1 egg

  • 3 tbsp of erythritol

  • 2 tbsp of cinnamon

  • 3 tbsp of butter or ghee

Frosting

  • 4 tbsp of cream cheese

  • 1 tsp of cinnamon

  • 1 tbsp of heavy whipping cream

  • 1 tbsp of erythritol (optional)

Directions

  1. Preheat oven to 400 degrees.

  2. Make the fat head dough add shredded cheese and cream cheese to a microwavable bowl, microwave on high for 1 minute. Stir the mixture and microwave again for 30 more seconds.

  3. Add the egg, salt, and almond flour to the cheese mixture and mix everything together gently. If dough is sticky sprinkle it with a little extra almond flour.

  4. Get 2 pieces of parchment paper (I spray them on 1 side with non-stick spray) and place dough ball in the middle of them.

  5. Using a rolling pin (or wine bottle in a pinch!) roll dough into a rectangle that is about ½ - ¾” thick.

  6. Peel off top piece of parchment paper, place dough and bottom piece of parchment onto a cookie sheet. The cookie sheet will help catch the leaking melted butter from the next step. 

  7. Melt the butter in a saucepan over low heat. Mix erythritol and cinnamon together in a small bowl.

  8. Pour melted butter over the dough, then sprinkle erythritol/cinnamon mixture on top. Roll into a tight jelly roll and then cut even rolls, about ½”.

  9. Bake for 10-15 minutes or until golden brown.

  10. Mix frosting together with spoon or mixer. Add to warm rolls.

ENJOY!

You can choose if you want larger rolls you can make a double or triple batch and roll them thicker. I love the mini rolls though because they help keep macros in check.

KETO RECIPE: Berry Cheesecake Bars

As I've said before, Cheesecake is one of my favorite desserts. Top it with berries and there is nothing better. These Keto Cheesecake Bars are heavenly. The keto cheesecake base is very simple and easily to customizable to include your favorite flavors.

Berry Cheesecake Bars

  • Serves: 4
  • Prep time: 10 minutes
  • Cook: 20 minutes

Ingredients

  • 4 tbsp. of Vital Farms butter, melted (YES, Vital Farms makes butter now!)
  • 2 Vital Farms eggs
  • 4 tbsp. of cream cheese (I set mine out on the counter for 20 minutes before using)
  • 1 tsp of vanilla extract
  • ¼ tsp of baking powder
  • 1-2 tbsp. of sweetener, to taste (I used Swerve)
  • 2 tbsp. of frozen blueberries or berry mix

Directions

  1. Preheat oven to 325 degrees.

  2. Place all ingredients except for the berries in a bowl.

  3. Using a hand mixer or an immersion blender mix thoroughly until completely smooth.

  4. Pour mixture into a small casserole or loaf pan (I use a 5 ½ x 7 ½ casserole) lined with parchment paper. You can also use well-greased muffin tins if you would like. If you only have a 9x9 pan you can make a double batch.

  5. Drop the blueberries or mixed berries in last. Distribute them evenly so you get some in every bar. They will sink as they cook, so do not mix.

  6. Bake for 20-25 minutes.

  7. Allow bars to cool and then flip dish upside down, cut into bars and serve.

KETO RECIPE: Keto Parmesan-Garlic Salmon with Asparagus

This is one of my go-to Keto Dinner Recipes. It's a Keto Salmon Recipe that is drenched in garlic, butter, and parmesan, and it takes under half an hour to prepare and cook. What could be better than that? I have a bunch of keto fish dishes that I rotate into our weekly meals, but this is my favorite. 

This keto recipe uses 5 ingredients, including my favorite Vital Farms Butter. It also only dirties two dishes which makes me so happy. There is nothing worse than the aftermath of a fish dish in your kitchen.

For this recipe, I decided to make asparagus for my side dish. I love that the cook time for asparagus and salmon are the same, so you don't have to worry about the vegetables wilting before the salmon is done. If for some crazy reason you don't like asparagus, you can substitute green beans. I like to add some red pepper flakes to green beans when I bake them to give them an added punch.

I love how this dish plates up. It is simple but beautiful. I mostly just make this for my daughter and I, but it is the perfect keto dish to serve to friends and family on any occasion.

KEEPING IT KETO DURING A BUSY WEEK

The last two weeks have extremely busy for me. Normally, cooking and prepping my keto meals brings me joy. But between traveling, work, and family activities, there hasn’t been a lot of time to think about cooking. 

This week is also going to be hectic, but I am going to take some time each day to focus on me.

This week I am going try to:

  • Drink more water
  • Turn off electronics 30 minutes before I go to bed
  • Do something nice for myself (take a bath, go on a walk, buy some flowers)
  • Cook delicious, colorful, keto recipes for my daughter and I

Cooking is magical for me. It is time sensitive, so it doesn’t leave a lot of room for me to think about other things. When I’m cooking, everything that has worried me during my day goes away. I am forced to be present in this moment and solve the problem right in front of me.

For this week, I’ve picked quick and easy recipes from my cookbook. I love the Steak and Egg Bibimbap. It only takes 30 minutes and feels like a fancy dinner. I will also make some jars of my Blackberry Chia Pudding for my daughter to eat in the morning and for me to enjoy for dessert.

A couple nights this week (and all weeks during volleyball season) my daughter has practice until 8, which is too late to cook, so on those nights we'll eat Keto Fridge or pizzas from Real Good Foods.
