KETO RECIPE: Fathead Pizza


I rarely make Fathead Pizza which I sometimes feel like makes me a one of the few Keto people who don't eat this on a consistent basis because it is so popular! I don't even know why I don't make it, I think I usually just get lazy and make a Skillet Pizza instead. But today it is cold, rainy and grey in LA (I know! It does happen sometimes:) and I am working from home, so I decided to make one! 

I have posted the recipe before, so you can click here or the button below to find it. I used the same one, except that I used 3/4 c of Almond Flour instead of the 1/2 c my old recipe stated. I used Base Culture Almond Flour because I like that it isn't refined and I thought it would add a nice texture which it totally did! 

Here are some pictures of this Fat Head Pizza adventure! I mine aren't as pretty as some people's but I just call that "rustic" haha! It is definitely delicious and is perfect for a chilly day or any day for that matter!  

Here are all the prep steps! You microwave the initial mixture of the Almond Flour, Cream Cheese and shredded Mozzarella cheese. Then you add the egg and seasonings of your choice. You have to have parchment under and on top of the mixture to roll it out. It is super sticky. Some people have the skills to roll theirs in perfect circle- I do not! Mine it ugly lol. I also roll a little crust on the edges. If one part is too thin, I cut some off an end and patch it in the area that needs it. Click the button above for detailed instructions. 

You need to poke a fork all over so it bakes evenly. Don't forget this step! 

I forgot to take a picture of the crust baked. Ooops! Once crust is golden brown, take it out and add your sauce and toppings. I used Puttanesca Sauce on bottom, then a layer of shredded Mozzarella, then grated Parm, then sliced black olives, then Pepperoni, and then more cheese! I used an entire 16oz bag of shredded Mozzarella cheese by the time I was done between the crust and the toppings. 

I used this sauce, which I love! I had a little left over from when I made Zoodles and Meat Sauce. I don't like a lot of sauce on my pizza so I put it on super sparingly. 

Done! YUM! You don't bake it very long with the toppings, just until the cheese is melted. Keep an eye on it or your crust will be too dark. Mine is just on the border, but it tasted great! 

Not pretty and my pan is so old haha! But you can tell lots of yummy dishes have been made with it over the years:)
