Keto Pasta… It’s a Miracle!

There is definitely a reason why entire cultures revolve around pasta. It is delicious! Pasta is the perfect carrier for cheese, garlic, bacon, and everything else. When first dedicating yourself to a keto lifestyle, you may think that your pasta eating days are over. But you can still enjoy the flavors you love with out the carbs.

Zucchini Noodles are one option- sometimes I grab a spiralizer and go to town. But I was so happy when I found Miracle Noodles.

 These shirataki noodles are made from the Konjac plants and have tons of fiber. This means that they are more filling than vegetables, and they have ZERO carbs. They also help balance blood sugar and are gluten-free.

KETO TIPS AND TRICKS: Keto Starter Bundle

Starting keto can be daunting. I constantly get questions about how to calculate macros, avoid the “keto flu”, and how to know if you are on the right track.

The first thing to do when switching to a keto lifestyle is calculate your macros. I use this Macro Calculator by Perfect Keto. It allows you to input your goals for Keto and takes them in to account as it calculates your target fats, proteins, carbs, and calories for the day.

I’ve head a lot of talk about the “keto flu” that some people experience in their first week of keto. Transitioning to the keto way of eating can be hard for everyone. The body goes through a lot transitioning from carb/sugar burning to become fat/ketone burning. However, I am certain that this “flu” has to do with a lack of electrolytes.

To ease the transition, be proactive about consuming:

  • Water with electrolytes (I use Smart Water)
  • Pink Salt (it is better than table salt), you need extra salt on Keto because you are not eating processed carbs that are full of salt
  • Extra salt: sip broth, take a shot of pickle juice, add pink salt to your water, you need extra salt on keto
  •  Potassium rich foods (avocado and spinach have way more potassium than a sugary and very non-keto banana)
  • Magnesium rich foods (dark chocolate, nuts, artichoke, spinach, fish) and/or take a supplement.

KEEPING IT KETO DURING A BUSY WEEK

The last two weeks have extremely busy for me. Normally, cooking and prepping my keto meals brings me joy. But between traveling, work, and family activities, there hasn’t been a lot of time to think about cooking. 

This week is also going to be hectic, but I am going to take some time each day to focus on me.

This week I am going try to:

  • Drink more water
  • Turn off electronics 30 minutes before I go to bed
  • Do something nice for myself (take a bath, go on a walk, buy some flowers)
  • Cook delicious, colorful, keto recipes for my daughter and I

Cooking is magical for me. It is time sensitive, so it doesn’t leave a lot of room for me to think about other things. When I’m cooking, everything that has worried me during my day goes away. I am forced to be present in this moment and solve the problem right in front of me.

For this week, I’ve picked quick and easy recipes from my cookbook. I love the Steak and Egg Bibimbap. It only takes 30 minutes and feels like a fancy dinner. I will also make some jars of my Blackberry Chia Pudding for my daughter to eat in the morning and for me to enjoy for dessert.

A couple nights this week (and all weeks during volleyball season) my daughter has practice until 8, which is too late to cook, so on those nights we'll eat Keto Fridge or pizzas from Real Good Foods.

KETO RECIPE: Buttery Slow-Cooker Mushrooms

Slow-cooker recipes make cooking healthy, keto-friendly meals so much easier. In the midst of a busy weekend of volleyball games and other activities, it's so nice to be able to throw these mushrooms in the slow-cooker in the afternoon and have a savory, keto, side dish ready for my daughter and I when we get home. These buttery, cheesy keto mushrooms take ten minutes to prep and cook slowly for up to four hours.

For this recipe, I got to use Vital Farms' new Pasture-Raised Sea Salted Butter. THAT'S RIGHT: VITAL FARMS MAKES BUTTER NOW. It is delicious and comes from grass fed cows in the U.S.

Cremini Mushrooms have my favorite texture. Be aware, they lose water as they cook so use a generous amount. If you have guests, I would suggest doubling or even tripling the recipe.

If you don't have dry ranch-dressing mix, you can mix some onion powder, garlic, pink salt, and pepper along with some dried herbs of your choice. This recipe would be amazing with some Herb Butter

The finished product is so delicious! It's savory, creamy, and goes quickly. Top it with a little parsley and enjoy.

KETO RECIPE: Beef and Bell Pepper "Potato Skins"

As most of you know,  I love sports and all of the game-watching foods that go with them. These Keto Bell Pepper "Potato Skins" are a perfect substitute for the real thing. The large slices of crunchy bell pepper act as the "skin". You can add classic fillings or spice it up. These Keto Beef and Bell Pepper "Skins" are colorful and delicious.

I use large organic bell peppers: I like to get an assortment of colors to really make the dish pop! For this recipe, I used grass-fed ground beef.

While the skins were in the oven, I whipped up some Avocado Sour Cream to add on top. The final product is colorful and so delicious. The "Skins" look beautiful when plated up for guests. Or you can enjoy these all by yourself.

KETO RECIPE: Peaches & Cream Perfect Keto Pancakes with Blueberry Syrup

You're probably reading the title of this recipe and wondering how on earth anything with peaches could be keto...
