KETO RECIPES: My Favorite Keto-Friendly Breakfasts


FATHEAD CINNAMON ROLLS

I can’t make a breakfast list without cinnamon rolls! Cinnamon Rolls are a special treat in our house. We normally eat them for birthdays or to celebrate a big achievement. My grandma used to make the best cinnamon rolls in the world, so they hold a special place in my heart.After I started keto, I found that I missed this special time with my daughter over a cinnamon roll. 

So I started experimenting with Keto Fathead Dough. Now I know what your'e thinking. Mozzarella cheese in a cinnamon roll? I promise that no one would guess that these aren't regular, carby, cinnamon rolls. This keto recipe is low carb and high in delicious healthy fats. 

PANCAKE BITES

As most of you know, we are obsessed with Keto Pancakes at our house. My original Pancake Cake recipe is in my Easy 5-Ingredient Ketogenic Diet Cookbook, but I’ve shared it many, many times. The fun part is that you can use the pancake mix and use it in different ways. One fun way is to bake them in a brownie pan, the ones that make the individual brownies so that each one has a perfect crust around it. It makes these beautiful, individual servings of pancake bites and it also makes it super easy to include add-ins like berries, keto friendly chocolate chips or anything else you can imagine!

You’ll definitely want to make these for your next brunch or big family breakfast because everyone gets their own unique flavor!

STRAWBERRY PANCAKE STACK

Sliced strawberries and whipped cream in between fluffy keto-friendly pancakes?! Yes please! Topped off with Choc Zero sugar-free strawberry syrup, this combination is strawberry heaven!

You could use blueberries, blackberries or even Choc Zero Chocolate Chips, create your own creative dreamy stack! You can also make waffles with the same recipe!

INSTANT POT CINNAMON-PECAN COFFEE CAKE

Growing up, my favorite breakfast was a boxed coffee cake that my mom would make. We would add chopped pecans to the top and slather it in butter and it was just incredible. This keto-friendly version of one of my favorite childhood treats is just as delicious as I remember. In the fall I sometimes like to change up the flavor by swapping pumpkin pie spice for the cinnamon and walnuts or almonds for the pecans- either way, you won’t be able to eat just one slice!

It serves 6 and comes together in under an hour with prep. Here’s the 7” round pan that I use when I make mine.

MEXICAN BREAKFAST BOWL

I love any kind of pork for breakfast, and that includes carnitas. This is a super-filling dish that is also calorie dense, so I like to eat this as the larger of the 2 meals I eat daily. If Chipotle served breakfast (which btw they totally should!), I imagine it would be something like this!

BLACKBERRY CHIA PUDDING

I developed this recipe one day when I had a can of coconut milk in my pantry and wanted to find a new way to use it. I whipped up the pudding using blackberries, which are a great low-carb option and they add a lot of great flavor and texture. This sweet treat could be a dessert, but I also enjoy it as a super-delicious breakfast. Loaded with fiber, iron, calcium, and omega-3 fatty acids, chia seeds are one of the most nutritious foods on the planet. The chia seeds soak in the coconut milk and soften overnight to help set the pudding mixture. Chia seeds help slow digestion, and the fat content of this pudding helps keep you feeling satisfied for hours.

FATHEAD BAGELS

Who doesn't love bagels? Luckily, you don't have to give up bagels to live a ketogenic lifestyle. Just make them at home! 

This FatHead Dough makes bagels that have the perfect texture and consistency. Today, I kept it simple and topped the bagels off with Everything Seasoning, but you can make any flavor you want. 

Add Jalapeños and cheese on top for a spicy keto snack. Or stuff them with blueberries and top with nut butter for a keto breakfast. 

LEMON BLUEBERRY BREAD

It still amazes me that I can live a keto Lifestyle and still enjoy food as decadent as this Keto Lemon Blueberry Loaf.

This bread is an actual slice of heaven. I adapted this recipe from my Cream Cheese Blueberry Muffin Recipe featured in Keto In 30 Minutes and turned it into a Lemon Blueberry Bread! The secret to the sweet Keto bread is the same as the muffins: Almond Flour, Erythritol, Cream Cheese, and Heavy Whipping Cream.

I love baking this bread on Sunday and snacking on it all week! It is also the perfect thing to bring to an office party or a housewarming party! Top a slice square of Grass-fed Butter and reheat it to perfection!

PARMESAN CLOUD EGGS

When I first saw cloud eggs I was amazed! I love poached eggs, but other kinds of over-easy eggs are underwhelming. But these Cloud Eggs are anything but boring! A runny yolk in the middle of Fluffy and beautifully seasoned egg whites? I am in!

This is my new favorite way to eat eggs. The Parmesan adds a beautiful crust to the fluffy egg whites. So you have smooth yolks, fluffy whites, and crunchy bacon and cheese all in one bite!
