Keto Recipe: Chocolate Cheesecake Muffins

Here is a fun and delicious recipe that can be made with ingredients found in any keto pantry: Choc Zero’s Chocolate Cheesecake Muffins.

This recipe seems like it would be complicated but it’s actually really easy. The Cheesecake Filling sets perfectly as it bakes all together. You don’t need piping bags or anything fancy. Just simple ingredients and muffin liners. And of course Keto Chocolate Chips from Choc Zero.

They are called muffins but these bad boys taste just like cupcakes to me! Rich and Creamy Cheesecake surrounded by Keto Chocolate Cake? Sign me UP!

Ok so here’s what you need:

For the Cream Cheese Filling:

  • 6 ounces softened cream cheese

  • 1/4 cup Keto powdered sugar

  • 1/4 cup heavy whipping cream

  • 1/2 tsp vanilla extract

Instructions for Cream Cheese Filling

  1. In a large bowl, beat the cream cheese with the sweetener until well combined. Add the cream and vanilla and beat until smooth. Set aside.

Ingredients for Chocolate Muffins

  • 4 large eggs, room temperature

  • 1/2 cup unsweetened almond milk room temperature

  • 1/3 cup melted butter

  • 1/2 tsp vanilla extract

  • 2 cups almond flour

  • 1/2 cup Keto sugar substitute

  • 1/3 cup cocoa powder

  • 1 tbsp baking powder

  • 1/4 tsp salt

  • 3 tbsp dark chocolate chips, sugar-free

Keto Chocolate Muffins

  1. Preheat the oven to 350F and line a muffin pan with liners. In a large bowl or blender, combine the almond milk, melted butter, eggs, and vanilla. Blend until smooth.

  2. Add the Keto Sweetener, cocoa powder, almond flour, baking powder, and salt. Blend until smooth. Your batter should be scoopable but not too runny.

  3. Fill each muffin cup about 2/3 of the way full. With the back of a spoon, create a well in the center of each muffin.

  4. Add about 1 1/2 tbsp of cream cheese filling to the center of each muffin. Top each muffin with Keto chocolate chips.

  5. Bake 20 to 25 minutes, until the edges are set and the centers are puffed up. Remove and let cool in the pan (the centers will sink, this is normal).

  6. ENJOY!
