KETO RECIPE: Fudge and Coffee Popsicles


Popsicles are one of my favorite desserts because they are so simple to make and I love having something sweet waiting for me in the freezer whenever I want one. Also take the opportunity to get super creative with combinations, add ins and toppings- I have some ideas below!

FUDGE POPSICLES

  • 3/4 cup coconut cream

  • 2 teaspoons confectioners erythritol (I use Swerve Confectioners)

  • 2 tablespoons unsweetened cocoa powder

  • 1 tablespoon of ChocZero Chocolate syrup

DIRECTIONS

  1. In a blender or food processor mix together all of the ingredients.

  2. Pour into ice molds.

  3. Freeze for at least 2 hours before serving.

FUN WITH TOPPINGS

Once you have your frozen popsicles, you have the perfect canvas for creativity! Here are some fun ideas!

  • Keto-friendly chocolate syrup as the base to stick any other toppings

    • My favorite is from ChocZero (they have lots of other flavors too)

  • Sliced almonds or crushed nuts

  • Keto-friendly sprinkles, I love these

  • Coconut flakes

  • Shaved chocolate

  • Sugar free chocolate chips are also great for dropping into popsicles

COFFEE POPSICLES

  • 2 cups of cold brew

  • 3/4 cup coconut cream

  • 2 teaspoons confectioners erythritol (I use Swerve Confectioners)
