KETO INSTANT POT RECIPE: Pork Chops and Quick ’Kraut


This dish is a play on the classic combination of pork and sauerkraut, with a quick ’kraut made from red cabbage, vinegar, mustard, and thyme that takes minutes to pull together. For some extra kick, I like to add a teaspoon of sweet paprika to my ’kraut. Make this easy but delicious dish for good luck on New Year’s Day—or any day of the week!

Cook time: 9 minutes

INGREDIENTS

  • 1 to 2 tablespoons butter or ghee

  • 1 clove garlic, minced

  • 2 bone-in center-cut pork chops, 1 inch thick

  • Fine Himalayan pink salt and black pepper

For the sauerkraut:

  • 1 (10-ounce) package shredded red or green cabbage (about 3 cups)

  • 3 tablespoons apple cider vinegar

  • 1 tablespoon whole-grain mustard or Dijon mustard, divided

  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme, crushed, divided

DIRECTIONS

1. Select SAUTÉ on the Instant Pot. When the pot is hot, add the butter and garlic. Sprinkle the pork chops with pink salt and pepper. Add the chops to the hot garlic butter and brown until golden, about 2minutes per side (see Tip on page 150). Select CANCEL. Remove the chops.

2. Make the sauerkraut: Add the cabbage, vinegar, 1∕4 cup water, 1∕₂tablespoon of the mustard, and 1∕₂ tablespoon of the thyme to the drippings in the pot. Whisk to release any browned bits on the bottom of the pot. Top with the chops and spread them with the remaining 1∕₂ tablespoon mustard and sprinkle with the remaining 1∕₂tablespoon thyme.

3. Secure the lid on the pot and close the pressure-relief valve. Set the pot to HIGH pressure for 9 minutes. At the end of the cooking time, use a natural release to depressurize for 10 minutes, then quick-release the remaining pressure. An instant-read thermometer inserted in the pork chops should read 145°F. If the pork chops are less than 145°F, secure the lid and let stand with the pot off for 2 to 4 minutes.

4. Serve the pork chops over the sauerkraut
