KETO RECIPE: LEGENDARY FOODS KETO APPLE PIE CHOCOLATE CHIP COOKIES


The first time I tried Legendary Food’s Apple Pie Almond & Cashew Nut Butter I fell in love! All of their flavors are amazing, but the Apple Pie feels extra naughty to me because apples are not part of the keto way of eating at all, but in this nut butter I can totally indulge! I generally keep my jar in the refrigerator and then have a couple spoonful’s when I have a craving, but one night I decided to get creative and see if I could make cookies with it. The result was delicious and super simple, just 4 ingredients and 12-15 minutes of baking time.

KETO PUMPKIN RECIPES! PERFECT FOR FALL!

During this time of year I purchase the Trader Joe's brand of pumpkin, they only carry it seasonally. During the rest of the year I buy the Target brand (Market Pantry), because they seem to always have it.

TIP! You want to make sure you are buying pure pumpkin and not pumpkin pie filling, which is loaded with sugar and carbs.

KETO POTLUCK!


The idea for a keto potluck came when I was chatting with my friend Yemeni and his lovely girlfriend Loumin, we both live in Hermosa Beach, so we decided to try to get a few other keto peeps together for some delicious keto food! 

 

Our first ever keto potluck was so much fun! We invited a small group to gather on my outdoor patio, eat, drink, and chat about out keto stories! Yemeni and I are going to make this into a regular potluck series. So if you live in Los Angeles, hit us up to get added to the invite list! 

 

The dishes I made for the potluck were Mississippi Pot Roast, Cilantro Lime Cauliflower, Cauliflower "Potato" Salad, Peanut Butter Cookies, and ChocZero dipped strawberries. I also provided the ingredients for adult keto root beer floats with Tito's vodka, heavy whipping cream, and Zevia cream soda and root beer. 

Mississippi Pot Roast

This is by far one of the easiest dishes to make! I love a slow cooker meal, especially for a potluck because it cuts down on the work you have to do right before the guests arrive! I made 4lbs of meat since I wanted leftovers, so if you buy a 2lb chuck roast, you can 1/2 everything. 

 

INGREDIENTS

 

DIRECTIONS

  1. Put the slow cooker on low.
  2. Season the meat with salt and pepper and place it on the bottom of the slow cooker. 
  3. Pour the packets of dry ranch dressing and gravy mix over the meat. 
  4. Place the sticks of butter on top of the meat and seasoning mixes. 
  5. Add the peperonicinis (I don't add the liquid, just the peppers) all around the butter on top of the meat. There will be plenty of liquid from the meat and the butter, no water or broth is needed. 
  6. Let it cook for 8 hours on low. 
  7. Shred beef with 2 forks.
  8. Place shredded beef and peperoncinis in serving dish. Buttery liquid can be used as a gravy, I pour it into a separate container.

Cilantro Lime Cauliflower Rice

The Cilantro Lime Cauliflower Rice paired great with the Mississippi Pot Roast! I found the recipe on Pinterest, you can link to the original HERE or I listed the ingredients from the wholesomelicious.com recipe down below. The only thing I changed is I used apple cider vinegar instead of white vinegar and I purchased fresh pre-riced cauliflower from Whole Foods. 

 

INGREDIENTS

  • 1 lb of cauliflower rice, the container I bought at Whole Foods was 1.25lb
  • 1 tbsp avocado or olive oil
  • 2 garlic cloves, minced
  • ½ large onion, chopped
  • ¼ cup chopped cilantro
  • 3 tbsp avocado or olive oil
  • 1 tbsp white vinegar
  • 1 garlic clove, minced
  • Juice of 1 lime
  • ½ tsp cumin
  • ½ tsp salt

DIRECTIONS

  1. Heat a large skillet to medium heat. Add oil, and saute onion and garlic for 3-4 minutes, or until fragrant. Add cauliflower rice and continue to saute.
  2. Meanwhile, make your sauce: Add cilantro, vinegar, garlic, lime, cumin, and salt to your food processor or blender. While motor is running, add remaining oil. Blend until smooth.
  3. Pour sauce on top of cauliflower rice, and continue to mix until dressing is completely incorporated. Remove from heat and serve.
  4. Add fresh cilantro to the top of the rice and serve. 
 

Cauliflower "Potato" Salad

You can literally use any potato salad recipe and just replace potatoes with roasted cauliflower. I roasted my cauliflower for about 30 minutes (I didn't time it exactly) at 400 degrees with olive oil drizzled over it and salt and pepper. Make sure not to add too much oil because you don't want soggy cauliflower. The cauliflower pieces should be bite size, so not huge florets but not tiny either. 

 

In the potato salad below I added Primal Kitchen Mayo, chopped celery and pickles, paprika, garlic salt, and sliced hard boiled eggs.

Keto Peanut Butter Cookies

ChocZero Dipped Strawberries

The easiest addition to the pot luck was definitely these strawberries! I posted recently about these great new dipping cups from ChocZero. You heat them in the microwave for 30 seconds and then dip away! I put them in the fridge and the chocolate hardened beautifully!

Adult Zevia Root Beer Floats

My new favorite keto cocktail is these creamy, delicious vodka drinks! It is also the easiest recipe I have ever had to write! The Zevia and vodka is delicious alone, but the heavy cream adds fat and a tasty creaminess. It gives you the ice cream feel, but without the carbs. You can also add a bit of vanilla extract if you want!

 

INGREDIENTS

  • Vodka (I used Tito's)
  • Heavy Whipping Cream
  • Zevia soda, I used Ginger Root Beer and Cream Soda
  • Ice 

 

DIRECTIONS

  1. Add equal parts of vodka and heavy whipping cream to glass with ice. 
  2. Fill remainder with Zevia soda. 
  3. Enjoy!

I wish I had photos of the delicious food everyone else brought, but it was super dark by the time the pot luck started, so unfortunately I don't have photos, but here is a list of the yumminess: 

  • Crispy salami with cream cheese and parsley

  • Buffalo chicken dip with pork rinds

I got a surprise in the mail the other day from Victor and Kris, the founders of @ketokookie! Nope, it wasn’t more cookies, it was this red ring with the hashtag #iAmKeto. Along with the ring was a note sharing their inspiration about starting the movement. Their hope is to build awareness of keto, encourage sharing of our keto stories, and to promote accountability. I love it! 


My own Keto story started about 21 months ago. I was searching for a diet that would help alieve some of the pain and symptoms from my autoimmune disorders. Over the last 10 years I have done Atkins, just regular low carb, gluten free, and finally I discovered Keto. I knew carbs and sugar were affecting me in a negative way, but I didn’t understand the effect of too much protein until I started reading up on Keto. 
I jumped right in, immediately loved how much better I felt within the first couple weeks. I also loved the challenge of creating keto friendly recipes, getting familiar macros, and all of the other new terms keto brought. As a single mom, I was also focused on converting my household to be keto because I truly feel this is a great way of eating for not just myself, but for my daughter as well. 


About a month into keto I started my blog and Instagram account, so that I could create a space where I could share food and find a community of keto people. I never could have dreamed that the community would have been so large or so supportive. I 100% credit this page and all of you for making this keto journey so rewarding both physically and emotionally. 


I could not be prouder to say I AM KETO and now I really love trying to share out some of the tips and information I have learned over the last 21 months with all of you! Whether your goal is losing weight, reducing inflammation, mental clarity, or a whole host of other benefits- it is great to see what a wonderful Keto community continues to grow and evolve.

KETO RECIPE: CHOCOLATE CHIP PEANUT BUTTER COOKIES


Mmmmmmmmm Peanut Butter + Chocolate is always a winner!

KETO RECIPE: CHOCOLATE CHIP PEANUT BUTTER COOKIES by Jen Fisch via Keto In The City

Typically I am not a big peanut butter person, but every once and awhile I get a craving for it and when I do I make these cookies! They are SO EASY and they're really delicious, I've even tasted them on my non-keto friends and they like them too! 

I love them with and without chocolate chips, so I always make 1/2 a batch of each. The peanut butter, Swerve and egg are things I always have in my house. The chocolate chips I try to pick up everytime I go to Whole Foods, which is the only grocery store I am always able to find them at. 

 

 

INGREDIENTS

  • 1 cup of chunky peanut butter
    • You could use creamy, but I wouldn't, the chunky adds a lot of great texture to the cookies!
  • 1/2 cup of sweetener (I use Swerve or Xyla
  • 1 egg (Vital Farms)
  • 1/4 cup of Lily's Chocolate Chips

DIRECTIONS

  1. Preheat the oven to 350
  2. Add the peanut butter, sweetener and the egg to a bowl.
  3. Mix completely, I use hand mixer. 
  4. Roll 1/2 the batter into 6-7 balls and place on cookie sheet.
  5. Add the chocolate chips to the rest of the batter and stir to combine. 
  6. Roll that half of the batter into 6-7 balls and place on cookie sheet.
  7. Press down on each ball with a fork to make a cross pattern.
  8. Bake for 12-15 minutes until nice and brown.

DO NOT try to transfer these cookies right after pulling them out of the oven, they need to cool or they will crumble. So leave them on the cookie sheet for about 20 minutes. 

 

Then I carefully move them onto a plate with a spatula and place the plate in the fridge for another 20 minutes before eating. 

A batch of peanut butter cookies calculates to about 35g of net carbs for the whole batch (measure you own since every peanut butter is slightly different). Divided by 14, that makes each cookie 2.5 net carbs. 

The chocolate chip peanut butter cookies are 44 net carbs for the whole batch, so divided by 14 that is 3 net carbs.

The gut healing benefits of bone broth are enormous. Bone broth also helps joint and skin health, 2 things that are essential for me since I suffer from Psoriasis and Psoriatic Arthritis.
