KETO RECIPE: Parmesan-Garlic Salmon with Asparagus
This is one of my go-to Keto Dinner Recipes. It's a Keto Salmon Recipe that is drenched in garlic, butter, and parmesan, and it takes under half an hour to prepare and cook. What could be better than that? I have a bunch of keto fish dishes that I rotate into our weekly meals, but this is my favorite.
This keto recipe uses 5 ingredients, including my favorite Vital Farms Butter. It also only dirties two dishes which makes me so happy. There is nothing worse than the aftermath of a fish dish in your kitchen.
For this recipe, I decided to make asparagus for my side dish. I love that the cook time for asparagus and salmon are the same, so you don't have to worry about the vegetables wilting before the salmon is done. If for some crazy reason you don't like asparagus, you can substitute green beans. I like to add some red pepper flakes to green beans when I bake them to give them an added punch. I love how this dish plates up. It is simple but beautiful. I mostly just make this for my daughter and I, but it is the perfect keto dish to serve to friends and family on any occasion.
Parmesan-Garlic Salmon with Asparagus

INGREDIENTS
2 (6 ounce) salmon fillets, skin on
Salt and pepper
1 pound fresh asparagus, ends snapped off
3 tablespoons butter
2 garlic cloves, minced
1/4 cup grated Parmesan cheese
DIRECTIONS
Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil or a silicone baking mat.
Pat the salmon dry with a paper towel, and season both sides with salt and pepper.
Place the salmon in the middle of the prepared pan, and arrange the asparagus around the salmon.
In a small saucepan over medium heat, melt the butter. Add the minced garlic and stir until the garlic just begins to brown, about 3 minutes.
Drizzle the garlic-butter sauce over the salmon and asparagus, and top both with the Parmesan cheese.
Bake until the salmon is cooked and the asparagus is crisp-tender, about 12 minutes. You can switch the oven to broil at the end of cooking time for about 3 minutes to get a nice char on the asparagus.
Serve hot.
