KETO IN 30 MINUTES RECIPE: Italian Sausage Soup
This cozy soup has a wonderful kick to it that will keep you extra warm on those chilly nights. I love the slightly spicy Italian sausage inside that gives it a great kick. I also love to add a generous amount of parmesan cheese on top ;)
The original version uses Spinach, but you can also use kale. I make this soup a lot, especially in the fall and winter paired with a nice big salad.
Italian Sausage Soup
Makes 4 servings
1 tbsp olive oil
1/2 onion, diced
3 garlic closes, minced
8 oz hot Italian sausage, removed from their casings
2 cups of chicken broth
1 (14.5 oz) can diced tomatoes
1 to 2 tsp red pepper flakes
1 tsp dried oregano
1 tsp dried basil
Salt and pepper
1/4 cup freshly grated Parmesan cheese, divided
2 cups chopped spinach or kale
DIRECTIONS
In a large saucepan over medium heat, heat the olive oil
Add the onion and garlic. Sautè for 5 to 7 minutes until the onion is softened and translucent.
Add the sausage to the pan. Cook for about 5 minutes as you crumble it, allowing the meat to brown.
Stir in the chicken broth and tomatoes. Bring to a boil and reduce the heat to low.
Add the red pepper flakes, oregano and basil. Season with salt and pepper and stir in 2 tablespoons of Parmesan. Simmer for 10 minutes and then remove from heat.
Stir in the spinach until wilted.
Serve sprinkled with remaining Parmesan.
Kale variation: Add to the pan with the onion and garlic. Follow rest of recipe as written.
