KETO INSTANT POT RECIPE: Peanut Butter Cup Fudge
Who else misses peanut butter cups? You can make this quick and easy peanut butter fudge in just 5 minutes--the hardest part is waiting 2 hours for it to cool! I love making this special treat for holiday parties and potlucks.
Coconut oil cooking spray
8 ounces of cream cheese
1 cup of ChocZero Chocolate Chips (dark or milk variety)
¼ cup of creamy peanut butter or any nut butter you prefer (choose a no sugar added variety)
2 tbsp of erythritol
1 tbsp of ChocZero Vanilla Syrup
1. Line 8x8” baking dish or 7” springform pan with parchment paper and spray with coconut oil cooking spray.
2. Add all ingredients to the pot of an electric pressure cooker and stir well. Set the pot to SAUTE for 2 minutes, stirring occasionally (do not put lid on).
3. Stir well to ensure the chocolate is fully melted.
4. You can pour melted mixture into silicone molds of any shape you like or place 8x8” baking sheet into the refrigerator and chill for at least 2 hours. Cut into 12 pieces.
You can make them extra fancy by sprinkling some sea salt, sea salt flakes or crushed nuts on top. You can also decorate with some extra squiggles of Choc Zero syrup as well.
