KETO RECIPE: Frosted Circus Animal Cookie Parfait
There’s something about circus animal cookies that I have always loved! They are so fun and festive and I can’t imagine eating them without a smile on your face. I had never even attempted to brainstorm how I could make them keto until I saw that my friends Choc Zero and Keto Focus had figured it out for me! So I took their circus animal cookie recipe and paired it with my cheesecake mousse to create a fun and whimsical, keto-friendly Frosted Circus Animal Cookie Parfait!
It is perfect for turning any day into a celebration! You can even turn it into an activity and let everyone in your family layer their own and get creative.
Frosted Circus Animal Cookie Cheesecake Parfait
STEP 1: Make the Keto Frosted Animal Cookies!
I originally found this cookie recipe on the Choc Zero site, it uses their amazing White Chocolate Baking Chips which I love. The recipe is also posted on Keto Focus’ website, I’m so thankful for her for creating this yummy keto take on one of my favorite cookies!
Cookie Ingredients
1 ½ cup almond flour
¼ cup coconut flour
¼ teaspoon salt
3/4 cup unsalted butter, softened
½ cup monk fruit blend or sweetener of choice
1 teaspoon vanilla
Keto Frosting
1 cup ChocZero White Baking Chips
Food coloring
Directions
1. Sift together almond flour, coconut flour and salt in a medium bowl.
2. In a medium bowl, mix together butter, monkfruit and vanilla extract.
3. Slowly add in dry ingredients. Mix Well
4. Wrap cookie dough in plastic wrap. Mold into a flat disc shape. Chill for 30 Minutes.
5. Place dough in between two pieces of parchment paper. Using a rolling pin, roll out dough until it is ¼ inch thick. Cut out animal shapes with cookie cutters. Place about 1 inch apart on a parchment lined baking tray. Return to the refrigerator to cool for another 10-15 minutes. Preheat oven to 350 degrees.
6. Bake cookies at 350 degrees for about 6 minutes or until edges start to turn golden brown. Remove from the oven and let cool on the baking tray for 2-3 minutes before transferring to a wire rack to finish cooling completely.
7. Melt ChocZero white baking chips in a small microwave safe bowl. Stirring every 30 seconds until melted, stirring in between. Add food coloring if desired.
8. Dip cooled cookie in melted chocolate and place on the wire rack to set. Add Sugar Free sprinkles while the chocolate is still warm.
Step 2: Whip up the Strawberry Cheesecake Mousse. It takes 5 minutes and uses only five ingredients.
INGREDIENTS
8 ounces of Cream Cheese (let sit on counter for 20 minutes to bring to room temperature)
2 tablespoons of heavy whipping cream or coconut cream
2 teaspoons of monk fruit or sweetener of choice
2 teaspoons of Vanilla Extract
2 Strawberries OR pink food coloring
Whipped cream (optional, but not in my world;)
Sugar free sprinkles
DIRECTIONS
Break up the cream cheese block into smaller pieces and place in food processor. I like to make sure they are evenly distributed around the blade.
Add the cream, sweetener and vanilla.
Mix together on high. I usually stop and stir twice with a small rubber scraper to make sure everything is mixed well.
Remove 1/2 the mixture, this will be your white layer.
Slice up 2 strawberries and place them in the food processor with the remaining cheesecake mixture. This will act as a natural food coloring for the pink layer. OR you can simply add a couple drops of food coloring into the food processor and mix thoroughly.
Step 3: Start assembly! In a sundae dish or a glass, layer the cheesecake mousse and big chunks of Frosted Animal Cookies, alternating colors and adding in Sugar Free Sprinkles wherever you want. Top with whipped cream and a menagerie of Frosted Animals. Enjoy!
Alternate: If you wanted to make this a bit lighter you could also use yogurt instead of cheesecake mousse. I love the lower sugar yogurts from Two Goods.
