KETO INSTANT POT RECIPE: Gyro Tzatziki Bowl


Tzatziki is a cool, creamy Greek yogurt sauce made with cucumbers, dill, and fresh garlic. I could eat it on just about anything. It’s the perfect accompaniment to many Mediterranean dishes, including this keto-friendly “gyro” bowl. I like to top my bowl with black olives, feta, onion, and sliced pepperoncini for that true “gyro” experience, but feel free to get creative with your own favorite toppings.

INGREDIENTS

  • Olive oil, for brushing

  • 11∕₂ pounds ground beef or lamb

  • 1∕₄ cup chopped onion

  • 2 cloves garlic, chopped

  • 1 tablespoon chopped fresh oregano

  • 1 teaspoon dried oregano

  • Fine Himalayan pink salt

  • Black pepper

For the tzatziki:

  • 3∕₄ cup plain Greek yogurt (you could also use sour cream if desired)

  • 1∕₂ cup shredded cucumber

  • 11∕₂ teaspoons chopped fresh dill

  • 1 clove garlic, minced

  • 2 romaine hearts, chopped

  • 1 small red onion, thinly sliced, for serving

  • 1 cup crumbled feta cheese, for serving

  • Sliced pepperoncini peppers, for serving (optional)

DIRECTIONS

1. Pour 1 cup water into the Instant Pot. Place 2 layers of foil on a trivet with handles, leaving enough space around the edges for steam to circulate. Brush the foil lightly with olive oil.

2. In a food processor, combine the ground meat, onion, garlic, fresh oregano, dried oregano, 1 teaspoon pink salt, and 1 teaspoon pepper. Pulse several times, then puree until smooth. Form into an oval loaf and place on the foil-lined trivet. Place the trivet in the pot.

3. Secure the lid on the pot and close the pressure-release valve. Set the pot to HIGH pressure for 15 minutes. At the end of the cooking time, use a natural release to depressurize.

4. Carefully remove the loaf from the pot. Let cool for at least 15minutes. Cut the loaf into 1∕4-inch-thick slices.

5. Adjust an oven rack to 6 inches below the heat source. Preheat the broiler. Line a large baking sheet with foil. Brush the foil with olive oil. Transfer the meat slices to the prepared sheet and broil until browned, 2 to 3 minutes. Flip the slices and broil until browned, 2 to 3 minutes more.

6. Meanwhile, make the tzatziki: In a small bowl, combine the yogurt, cucumber, dill, and garlic. Season the tzatziki to taste with pink salt and pepper.

7. Place the lettuce in serving bowls. Top with the meat, tzatziki, sliced red onion, feta, and pepperoncini.
