Every once in awhile I throw together a recipe that instantly becomes one of my favorite things, this is one of them and it only has 5 ingredients!!
I wanted to create a decadent dessert that would be a great holiday treat. I started with Nui Cookie Snickerdoodles because they always remind me of the holidays, although I would definitely eat them any time of the year! Then I added dark chocolate from Choc Zero Dipping Cups, crispy bacon, chopped pecans, and topped it off with sea salt.
The result is DELICIOUS! See the step by step instructions below!
STEP ONE: GATHER YOUR INGREDIENTS
- 1 packet of Nui Snickerdoodle Cookies (each packet includes 2 cookies)
- 5 Choc Zero Dipping Cups, I used Dark Chocolate ****SEE ALTERNATIVE BELOW********
- Crispy bacon crumbled, I used 2 slices
- Handful of pecans, chopped
- Pinch of sea salt
STEP TWO: MELT THE CHOCOLATE AND POUR ONTO SILICONE MAT (OR PARCHMENT PAPER)
Once you have all of your ingredients gathered, it is time to melt your chocolate. Since I used the Choc Zero dipping cups I simply took the tops off, gathered them all on a plate and microwaved them for 30 seconds, stirred them and then continued to microwave for small increments until fully melted.
******Choc Zero has been sold out of Dipping Cups for quite some time, but I have been told that they are coming back in stock soon. As an alternative to the dipping cups, you can always melt some of Choc Zero's Dark Chocolate Squares or Dark Chocolate Almond Bark. It should melt nicely in a sauce pan on very low heat. If you aren't getting a smooth consistency, try adding a little bit of Coconut Oil. *********
Once melted I poured the chocolate onto my silicone mat. You can pour the chocolate in any shape you desire, but do it fairly quickly so it doesn't begin to harden.
I did not have a pan under my silicone mat, but I would recommend that so you can quickly add it to the refrigerator once you are done. The Choc Zero hardens very nicely, so I simply waited 20 minutes until it was hard enough and then slid a cutting board underneath and transferred it all to the fridge. But not until you finish the next step... add your toppings!
STEP THREE: ADD THE TOPPINGS!
This is the best part! Crumble the Keto Kookies into smaller chunks and spread evenly around the bark so you get a little in every bite! Then fill in the space in between with crumbled bacon and chopped pecans. To finish off the bark add a pinch of sea salt.
Then if you have a little extra bacon and a little extra chocolate...
STEP FOUR: REFRIGERATE UNTIL HARDENED AND THEN SERVE!
LOOK. AT. THIS. BARK! Drool worthy, right?! Look at those big Nui Cookie Chunks! Break it up into smaller pieces and then serve!

- 1 Choc Zero Dark Chocolate Dipping Cup is 4g of net carbs
- 1/2 oz of pecans is about 2g of carbs
- 2 slices of back is 0 carbs
