KETO RECIPE: Almond Pesto Cauliflower Steaks
Cauliflower is my favorite vegetable, so I am always looking for new ways to enjoy it. Making pesto is super easy and you can really make it with any nut that you have at home. Since I always have almonds, I typically use them in my pesto. The flavorful pesto paired with the melted cheese on top of the cauliflower steaks is the perfect side or a delicious veggie based meal.
Almond Pesto Cauliflower Steaks
Serves: 2
Prep time: 5 minutes
Cook time: 25 minutes
INGREDIENTS
2-3 tablespoons of olive oil or brushing “steaks”
1 head of cauliflower
Pink Himalayan salt
Freshly ground black pepper
2 cups of fresh basil leaves
½ cup grated parmesan cheese
¼ cup almonds, salted
¼ cup sliced almonds
½ cup shredded mozzarella cheese
Note: you can use any nut you would like in your pesto. I always tend to use almonds because I always have them on hand, but traditional pine nuts or walnuts also work great!
DIRECTIONS
Preheat the oven to 425 degrees. Place parchment paper on a baking sheet.
To prep the cauliflower steaks, remove and discard the leaves and cut the cauliflower into 1” thick slices. You can roast the extra floret crumbles that fall off with the steaks.
Place the cauliflower steaks on the baking sheet and brush them with olive oil. You want the surface lightly coated so it gets caramelized. Season with salt and pepper.
Roast the cauliflower steaks for 20 minutes.
Meanwhile, put the basil, Parmesan cheese, almonds and 2 tablespoons of olive oil in a food processor or blender. Season with salt and pepper and mix until combined.
Spread some pesto on top of each cauliflower steak, and top with the mozzarella cheese and sliced almonds. Return to the oven until the cheese melts, about 2 minutes.
