KETO RECIPE: Strawberry Cheesecake Mousse

My daughter and I love this super easy dessert that any cheesecake-loving person will devour. It only takes a few minutes to pull together and can be customized with any fruit that you like. After strawberries, blackberries are my favorite fruit to incorporate. You can either eat right away or chill for an hour before eating.

INGREDIENTS

  • 4oz cream cheese, softened

  • 1 tablespoon heavy whipping cream

  • 1 teaspoon erythritol (I use Swerve

  • 1 teaspoon vanilla

  • 4 strawberries, hulled

  • 4 strawberries, sliced

 DIRECTIONS

  1. Place softened cream cheese into a food processor, I like to break it up into smaller pieces. Add the cream, sweetener and vanilla. 

  2. Mix together on high until combined. Scrap the sides of the bowl and mix again. 

  3. Add the strawberries into the food processor and mix until combined. 

  4. Divide the strawberry cheesecake mixture between 2 small dishes

  5. Layer in the sliced strawberries, you can also top with some whipped cream if you would like.
