KETO RECIPE: Fluffy Low Carb and Keto Pancakes and Waffles
I love pancakes, I mean who doesn’t?! Especially once the weather gets a little cooler I love to cozy up with a stack of pancakes and warm syrup. I love seasonal syrups too, my favorites are Pumpkin Spice and Maple Pecan which are only offered up for a limited time on the ChocZero site so I always stock up. Add a little Pumpkin Pie Spice into you batter and top with Pumpkin Syrup and it is fall perfection!
Of course Choc Zero syrups are all thick, rich syrups which are low carb, sugar free, sugar alcohol free and (most importantly) SO TASTY! You definitely won’t miss the sugar. I love all their products and I use the syrups all the time, not just on pancakes. Try using them for candied bacon, wings and more!
My easy pancake recipe can also be used for waffles! So whichever is your preference and of course you can also get creative with your pancake toppings and batter additions. Crumble some walnuts, pecans or macadamia nuts on top. Put some fruit in the batter. Switch out the vanilla extract with maple or pumpkin! I think having fun with your food is super important so don’t be afraid to play around!
Fluffy Keto and Low Carb Pancakes
INGREDIENTS
8 eggs
6 oz cream cheese, softened
2 tsp liquid Stevia (or sweetener of choice)
3 tsp baking powder
1/2 cup coconut flour
1 tbsp vanilla extract
1 tsp of cinnamon (or pumpkin pie spice is good too!)
Butter for griddle (about 4 tbsp)
DIRECTIONS
In a food processor (or blender), process the eggs, cream cheese, sweetener, baking powder, coconut flour, cinnamon, and vanilla until thoroughly combined.
Heat large skillet or griddle to medium-high, melt butter on the skillet and pour ¼ cup servings of batter.
When pancakes set on one side, flip them and cook about a minute more until cooked through.
