I know a lot of people like to go out to eat on Mother’s Day, but I don’t really love the crowds and a bunch of other people’s kids all over the place lol. For me I would rather spend Mother’s Day at home, with my daughter and sometimes we get to go to AZ to be with my parents as well. Ramekin eggs are a simple dish that give you the opportunity to play with different flavor combinations. This version with sausage, mushrooms, and mozzarella is a classic, but you could swap in any meat, cheese, or vegetable you’d like. You can also opt to make these single-serving ramekins dairy-free by leaving out the cheese and swapping out the heavy cream for canned coconut milk (just be sure to shake it up or whisk it together before measuring). Personally, I love my eggs topped with some perfectly melted cheese!
