The Benefits of Ginger

I am loving all things ginger right now!

Ginger has the amazing ability to warm you up from the inside out. It has amazing benefits for when you are feeling under the weather or just a little off.

It doesn’t really matter how you eat ginger if you’re feeling sick. You can even get it in cookie form. Nui Cookies has a delicious Ginger Something Cookie that’s not quite a ginger snap or a ginger bread but has all of the warmth and spice of my favorite ginger recipes.

Low Carb Ginger Something BisCookie Recipe

Ingredients for 14-16 pieces:
-
4 Nui Ginger Something Cookies
½ cup unsweetened chocolate chips, melted
¼ cup sliced almonds

Directions: 
1. Slice cookies in strips.
2. Dip half of the biscookie in melted chocolate and place on parchment/paper.
3. Sprinkle almonds and chill for 30 minutes before serving.

GINGER TEA

  • 2 tablespoons ginger root (fresh, raw, about 2 inches of ginger root)

  • 1 1/2 to 2 cups water

  • Juice of 1/2 a lemon or lime

  • Optional: keto friendly sweetener

1. Slice the ginger, no need to peel it 

2. Boil the ginger in the water for at least 10 minutes, I usually do 15 minutes

3. Remove from the heat and add lemon or lime juice and sweetener if you prefer.

4. Enjoy!

Ginger Something Fat Bombs Recipe
Ingredients for 4 Fat Bombs: 
2 Nui Ginger Something cookies 
1 tbsp almond butter 
1 tbsp butter, melted 
½ tsp MCT oil - 
Directions: 
1. Blend cookies, set 1 tbsp aside for coating 
2. Add melted butter, almond butter, and MCT oil. Blend for 2 minutes or until mixture is smooth.
3. Scoop with mini ice cream scooper and roll crushed Ginger Something cookies on outside. 
4. Chill for 30 minutes and enjoy!
