I love cookies and I love making creative recipes out of cookies. This one is the easiest of all because it literally just uses No Cow cookies and keto friendly chocolate fudge to make a super simple and super decadent dessert in minutes!

 

The No Cow cookies are dairy free, gluten free, soy free, non-GMO, vegan, and have no sugar added! Their Peanut Butter cookie has 4g of net carbs (17g – 6g of fiber – 7g of sugar alcohols) and the Double Chocolate cookies has 2g of net carbs (19g - 9g of fiber - 7g of sugar alcohols! Both flavors are great and are flavored with Stevia and Monk Fruit. I love them heated up for 15 to 30 seconds, but also eat them right out of the package.

 

Lately I have been contemplating going dairy free because dairy can be inflammatory, so it’s great to know that if I do I have No Cow cookies to enjoy. All of the No Cow products are free of dairy thus the name NO COW! I am also very excited that the cookies are gluten free and soy free.

Desserts don’t get much easier than this! Grab some friends and pile the cookies high, I liked alternating the No Cow Peanut Butter and Double Chocolate cookies and then of course drizzling the keto friendly chocolate fudge by Choc Zero all over! Watch the video below to see my cookie stack skills in action! So easy right?!?! I crumbled some cookie crumbs on top, but a little keto friendly whipped cream on top would be a great addition too.

 

INGREDIENTS

  • 4 No Cow cookies

    • 2 Peanut Butter, 2 Double Chocolate

  • Choc Zero Chocolate Fudge

    • 4 tbsp or pour to taste

  • 4 hungry friends

NO COW TOPPED WITH KETO BUTTERCREAM

A No Cow cookie is a delicious canvas for all kinds of flavor combinations! Keto buttercream and sliced strawberries are one of my favorite toppings to add some fat and sweetness, plus it looks beautiful! The buttercream is not dairy free, but you could make something similar with whipped coconut cream.

 

INGREDIENTS

  • 1 No Cow cookie

    • I used Double Chocolate, microwaved for 30 seconds

  • ¼ cup of keto buttercream frosting

    • Whip all the ingredients together in a mixer or with a hand mixer

    • 2 tbsp of grass-fed butter

    • 1 splash of heavy whipping cream

    • ½ tsp of vanilla extract

    • Liquid Stevia or sweetener of choice to taste

 

 

  • 1 strawberry, sliced
