For me, summer desserts need to be easy! These are some of my absolute favorites and of course you can enjoy them all year around, but they are especially perfect when it’s hot outside and you don’t want to be baking anything in the oven. This dessert cooks in just 4 minutes! Perfect individual sized cake that you just can’t resist. I’ve even made this sweet, creamy cake for breakfast before!

Peanut Butter Cup Fudge

Who else misses peanut butter cups? You can make this quick and easy peanut butter fudge in just 5 minutes--the hardest part is waiting 2 hours for it to cool! I make it in my Instant Pot!

Blueberry-Blackberry Ice Pops

Blueberries are my favorite fruit, and blackberries are a close second. So I created a creamy, refreshing ice pop using both. The color of these ice pops is gorgeous! These also make yummy fat bombs!

Green Tea Coconut Milk Custards

Did you know you can make Keto Dairy Free Custard??? My mind was blown when this coconut custard actually worked. Now I make them all of the time.

My favorite custard to make is this Green Tea Coconut Custard. I love the combination of Matcha and Coconut Milk. Something about the coconut cut any bitterness from the tea and results in a light and refreshing flavor that is perfect for warm weather! To give your custards a magazine ready look, use a sifter and shake some matcha powder and nutmeg over the top before serving. You can even top them with toasted pistachios, whipped cream, or blackberries.

Chocolate Chip Yogurt Pops

There are lots of great low carb and low sugar yogurt options these days, so you can choose your favorite. Then I use Vanilla syrup, but ChocZero has lots of delicious syrup flavors so you could mix it up with Mango, Strawberry or Banana!

Spiced Crème Brûlée

One of my favorites to make right now is Spiced Crème Brûlée. They are the perfect portioned treats for my daughter and I to enjoy together. We make them in a batch of four and enjoy them over a couple of nights. If you have a kitchen torch, this is your chance to bust it out. But you can easily get a crunch Keto Caramel using your oven. This recipe uses cinnamon, nutmeg, and cloves to give the custard a warm spicy flavor, but you can opt for the classic vanilla Crème by just leaving those spices out.
