KETO INSTANT POT RECIPE: Sausage and Mushroom Ramekin Eggs


Ramekin eggs are a simple dish that give you the opportunity to play with different flavor combinations. This version with sausage, mushrooms, and mozzarella is a classic, but you could swap in any meat, cheese, or vegetable you’d like. You can also opt to make these single-serving ramekins dairy-free by leaving out the cheese and swapping out the heavy cream for canned coconut milk (just be sure to shake it up or whisk it together before measuring). Personally, I love my eggs topped with some perfectly melted cheese!

Cook time: 5 minutes

INGREDIENTS

  • Butter or ghee, for the ramekins

  • 1 tablespoon avocado oil

  • 4 ounces bulk breakfast sausage

  • 1 cup chopped mushrooms

  • 4 large eggs

  • Fine Himalayan pink salt and black pepper

  • 4 tablespoons heavy cream

  • 4 tablespoons shredded mozzarella cheese (1 ounce)

DIRECTIONS

1. Coat the bottoms and sides of four 6-ounce ramekins with butter. Set aside.

2. Select SAUTÉ on the Instant Pot. When the pot is hot, add the avocado oil. Add the sausage and mushrooms to the hot oil and cook and stir until the sausage crumbles are browned and the mushrooms tender, about 5 minutes. Select CANCEL.

3. Remove the sausage and mushrooms from the pot and divide among the ramekins. Crack one egg into each ramekin and sprinkle with a pinch each of salt and black pepper. Add 1 tablespoon cream and top with 1 tablespoon mozzarella.

4. Pour 1 cup water into the Instant Pot. Place a trivet with handles in the pot and place three ramekins on the trivet. Stagger the remaining ramekin on top. Secure the lid on the pot and close the pressure-release valve. Set the pot to HIGH pressure for 5 minutes. At the end of the cooking time, quick-release the pressure. Open the pot and lift the trivet and ramekins from the pot.
