KETO RECIPE: LOW CARB SAVORY CREAM CHEESE MUFFINS WITH EVERYTHING BUT THE BAGEL SEASONING

I set out with full intention to make the delicious looking biscuits that @ketoislife made yesterday, but then I started gathering the ingredients and realized that I was out of some of the key ingredients. I was short on almond flour and I didn't have any sour cream. So instead, I decided to improvise a bit and I used the following to make 3 giant muffins (I used an oversized muffin tin from William Sonoma). They turned out so well, the next day I made a double batch and used a mini muffin tin and a donut pan to try out some other shapes and sizes. 

 

Preheat the oven to 400 degrees

 

INGREDIENTS

 

 

DIRECTIONS

  1. Mix dry ingredients. Mix wet ingredients. Mix wet into dry. (I used a hand mixer).

  2. Fold in shredded cheese. 

  3. Put mix into greased muffin tins, sprinkle Everything Bagel Seasoning on top.

  4. Bake at 400 degrees for 12 minutes or golden brown on top.

Then let them cool, add butter and devour!!!!!!

 

They turned out really delicious! Super moist and I was surprised how well they puffed up!

The macros for one batch. You can divide this up by however many muffins, biscuits, etc... you make. I used the Carb Manager app to calculate this.
