KETO RECIPE: STRAWBERRY CHEESECAKE MOUSSE

I love this super easy dessert that any dairy eating, cheesecake loving person will devour! It takes 5 minutes to make and can easily be customized to include your favorite flavors! 

This is one of my favorite recipes from my cookbook, The Easy 5-Ingredient Ketogenic Diet Cookbook.

KETO RECIPE: STRAWBERRY CHEESECAKE MOUSSE by Jen Fisch via Keto In The City

INGREDIENTS

  • 4 ounces of Cream Cheese 
  • 1 tablespoon of heavy whipping cream
    •  This can be unsweetened full fat Coconut Milk, Almond Milk, or Heavy Whipping Cream.  Whatever you have in the house is fine! Today I used Califia Farms Coconut Almond Milk, but usually I use Heavy Whipping Cream. 
  • 1 scoop of Perfect Keto MCT Oil Powder 
    • This ingredient is optional, but justs boosts up the healthy fats even more and is flavorless. 
  • 1 teaspoon of Swerve natural sweetener or 1 drop of liquid stevia
  • 1 tsp of Vanilla Extract
  • 4 Strawberries
    • You could also use a handful of blackberries or raspberries instead

DIRECTIONS

  1. Break up the cream cheese block into smaller pieces so that it is evenly distributed around the blade. Add the cream, sweetener, vanilla, and MCT Powder. 
  2. Mix together on high. I usually stop and stir twice with a small rubber scraper to make sure everything is mixed well. 
  3. Slice up 4 strawberries and place them in the food processor with the cheesecake mixture. Again mix until combined and use rubber scraper to incorporate everything. 
  4. Divide strawberry cheesecake mixture between 2  vessels.  Then I like to slice up additional strawberries and put them on top.
  5. You can eat this right away or chill it for an hour before eating, it is delicious either way! 

INGREDIENT TIP- Set the cream cheese out on the counter for 20 minutes or so working with it. If the mixture still seems thick, mix in a little more cream to help it incorporate. 

You can customize this dessert in so many ways! I have added lemon zest in the past for nice freshness!

How to Still Enjoy Chocolate on a Keto Diet with Choc Zero

KETO RECIPE: Peaches & Cream Perfect Keto Pancakes with Blueberry Syrup

You're probably reading the title of this recipe and wondering how on earth anything with peaches could be keto...

 

The secret is Perfect Keto's Peaches & Cream  Base. I simply added it to my Keto Pancake/Waffle batter! It was super easy and definitely added a nice, subtle, sweet flavor while also giving us the added benefit of exogenous ketones

NUI COOKIE SNICKERDOODLE BARK WITH DARK CHOCOLATE, BACON, PECANS, AND SEA SALT

Every once in awhile I throw together a recipe that instantly becomes one of my favorite things, this is one of them and it only has 5 ingredients!!

I wanted to create a decadent dessert that would be a great holiday treat. I started with Nui’s Snickerdoodle low carb keto snack Cookies because they always remind me of the holidays, although I would definitely eat them any time of the year! Then I added dark chocolate from Choc Zero Dipping Cups, crispy bacon, chopped pecans, and topped it off with sea salt.

 

The result is DELICIOUS! See the step by step instructions below!

 

STEP ONE: GATHER YOUR INGREDIENTS

  • 1 packet of Nui low carb keto snack cookies in Snickerdoodle (each packet includes 2 cookies)

  • 5 Choc Zero Dipping Cups, I used Dark Chocolate ****SEE ALTERNATIVE BELOW********

  • Crispy bacon crumbled, I used 2 slices

  • Handful of pecans, chopped

  • Pinch of sea salt

 

STEP TWO: MELT THE CHOCOLATE AND POUR ONTO SILICONE MAT (OR PARCHMENT PAPER)

Once you have all of your ingredients gathered, it is time to melt your chocolate. Since I used the Choc Zero dipping cups I simply took the tops off, gathered them all on a plate and microwaved them for 30 seconds, stirred them and then continued to microwave for small increments until fully melted. 

******Choc Zero has been sold out of Dipping Cups for quite some time, but I have been told that they are coming back in stock soon. As an alternative to the dipping cups, you can always melt some of Choc Zero's Dark Chocolate Squares or Dark Chocolate Almond Bark. It should melt nicely in a sauce pan on very low heat. If you aren't getting a smooth consistency, try adding a little bit of Coconut Oil. *********

Once melted I poured the chocolate onto my silicone mat. You can pour the chocolate in any shape you desire, but do it fairly quickly so it doesn't begin to harden. 

I did not have a pan under my silicone mat, but I would recommend that so you can quickly add it to the refrigerator once you are done. The Choc Zero hardens very nicely, so I simply waited 20 minutes until it was hard enough and then slid a cutting board underneath and transferred it all to the fridge. But not until you finish the next step... add your toppings! 

 

STEP THREE: ADD THE TOPPINGS! 

This is the best part! Crumble the Nui low carb keto snack cookies into smaller chunks and spread evenly around the bark so you get a little in every bite! Then fill in the space in between with crumbled bacon and chopped pecans. To finish off the bark add a pinch of sea salt. 

YUMMMMMMM!

Then if you have a little extra bacon and a little extra chocolate...

SO GOOD!

 

STEP FOUR: REFRIGERATE UNTIL HARDENED AND THEN SERVE! 

LOOK. AT. THIS. BARK! Drool worthy, right?! Look at those big Nui Cookie Chunks! Break it up into smaller pieces and then serve!

Nutritional information will vary depending on the size of bark, but you can consider the following: 

  • 1 packet of Nui Snickerdoodles (2 cookies) is 2g of net carbs

  • 1 Choc Zero Dark Chocolate Dipping Cup is 4g of net carbs

  • 1/2 oz of pecans is about 2g of carbs

  • 2 slices of back is 0 carbs
