KETO RECIPE: Lemon Blueberry Bread


It still amazes me that I can live a keto Lifestyle and still enjoy food as decadent as this Keto Lemon Blueberry Loaf.

This bread is an actual slice of heaven. I adapted this recipe from my Cream Cheese Blueberry Muffin Recipe featured in Keto In 30 Minutes and turned it into a Lemon Blueberry Bread! The secret to the sweet Keto bread is the same as the muffins: Almond Flour, Erythritol, Cream Cheese, and Heavy Whipping Cream.

I love baking this bread on Sunday and snacking on it all week! It is also the perfect thing to bring to an office party or a house warming party! Top a slice square of Grass-fed Butter and reheat it to perfection!

Lemon Blueberry Bread

INGREDIENTS

  • Non Stick Cooking Spray

  • 2 Cups Almond Flour

  • 2 Tbsp of Lemon Zest

  • 6 to 8 Tbsps of Erythritol

  • 1 1/2 Tbsp of Baking Powder

  • 4 Eggs

  • 1/4 Cup Cream Cheese

  • 1/4 Cup Heavy Whipping Cream

  • 1/2 Cup Butter, Melted and Cooled

  • 4 Tsps Vanilla Extract

  • 1/4 Cup Blueberries, fresh or frozen

DIRECTIONS

  1. Preheat Oven to 400º F. Line a Loaf pan with cooking spray.

  2. In a medium bowl, mix almond flour, erythritol, and baking powder.

  3. In a large bowl, mix eggs, cream cheese, heavy whipping cream, butter, vanilla, and lemon zest with a hand mixer.

  4. Pour flour mixture into the egg mixture and beat with a hand mixer until thoroughly incorporated.

  5. Pour the mixture into prepared loaf tin.

  6. Drop Blueberries into the top of the mixture, trying to keep them evenly distributed.

  7. Bake for 15 minutes, or until golden brown.

  8. Once it is cool, Slice it and top with a square of grass-fed butter.

Keto Recipe: Fat Snax Lemony Lemon Cookie Bowl

The cookies are great by themselves, but this week I was in the mood for something a little more substantial. I made a Lemony Lemon Cookie Bowl. Fat Snax cookies make a perfect crumble topping for this yogurt and fruit bowl.  

Lemony Lemon Cookie Bowl 

• 1 container of plain keto friendly yogurt (I used Peak Yogurt)

• Handful of berries, I used Jumbo blueberries (look how huge they are!) and 4 organic strawberries

• 1 (or 2 if you're feeling extra sweet) Lemony lemon Fat Snax Cookie

This bowl would work for me any time of the day! The lemon cookies add so much brightness along with the berries, it was the perfect combination.

Lemony Lemon is my favorite. It is sweet but still light and fresh. It fits perfectly in this bowl with fresh berries and keto yogurt.

Fat Bombs- Do you need to eat them?

Let’s talk about Fat Bombs! Do you need them? When should you eat them?

Fat Bombs are yummy keto treat. I have several fat bomb recipes, including these Spicy Chocolate Fat Bombs, in my two cookbooks, The Big Book of KETO and The Easy 5-Ingredient Ketogenic Diet Cookbook. But Fat Bombs are NOT A NECESSARY PART OF KETO.

There is no reason to load up on fat bombs at the end of the day just to hit your fat macro. If you are full and in ketosis, you don’t need fat bombs.

That being said, it can be very convenient to have keto friendly sweet treats prepped in your freezer whenever you want to pop one! 

Fat Bombs are a great and filling snack. They offer long lasting energy and are perfect for mid-morning/late-night snack. You may find them useful before or after your workouts to give you energy and prevent the post workout nap. If caffeine in the afternoon keeps you up all night, consider eating a fat bomb at 3 o’clock to get you through your work day.


Fat Bombs are a useful tool if you are having a hard time staying in Ketosis. If you accidentally ate too many carbs and are no longer in Ketosis, you can eat a Fat Bomb to get yourself back on track. But I would only recommend doing this if you are in Keto Emergency Mode. Reset your body for the day and then try again tomorrow.

Remember Keto is a lifestyle. It takes a lot of commitment, but it is so worth it. Your goal should be to stay within your carb limit and get enough fat from your meals that fat bombs are an unnecessary treat.

I was super excited to be invited to speak on a panel at Know Foods first ever Cookies & Coffee Expert Panel discussion at We Work in Manhattan Beach. I was joined on the panel by Ryan Plowery from Ketogenic.com, Suzanne Ryan from @ketokarma, Victoria Field from The Metabolic Health Summit, and Yemeni Mesa the CEO of Know Foods was the moderator.

I can blab on for hours about keto so I was super excited to join this group to answer questions from the in person and online audience. Know Foods is planning on taking these events around the country to help keto and keto curious people connect.

Victoria and Yemeni are my neighbors in the South Bay part of Los Angeles and I had met Ryan before at Expo West, but I'd never met Suzanne before so it was super fun getting to chat with her about keto, mom life, and more! 

All of the people on this panel will also be at the Metabolic Health Summit at the end of January in Long Beach which is going to be an AMAZING conference where science meets society. It will feature all your favorite keto Instagrammers along with the smartest doctors and researchers on the planet who are studying keto for medical applications.
