KETO RECIPE: Lemon Blueberry Bread


It still amazes me that I can live a keto Lifestyle and still enjoy food as decadent as this Keto Lemon Blueberry Loaf.

This bread is an actual slice of heaven. I adapted this recipe from my Cream Cheese Blueberry Muffin Recipe featured in Keto In 30 Minutes and turned it into a Lemon Blueberry Bread! The secret to the sweet Keto bread is the same as the muffins: Almond Flour, Erythritol, Cream Cheese, and Heavy Whipping Cream.

I love baking this bread on Sunday and snacking on it all week! It is also the perfect thing to bring to an office party or a house warming party! Top a slice square of Grass-fed Butter and reheat it to perfection!

Lemon Blueberry Bread

INGREDIENTS

  • Non Stick Cooking Spray

  • 2 Cups Almond Flour

  • 2 Tbsp of Lemon Zest

  • 6 to 8 Tbsps of Erythritol

  • 1 1/2 Tbsp of Baking Powder

  • 4 Eggs

  • 1/4 Cup Cream Cheese

  • 1/4 Cup Heavy Whipping Cream

  • 1/2 Cup Butter, Melted and Cooled

  • 4 Tsps Vanilla Extract

  • 1/4 Cup Blueberries, fresh or frozen

DIRECTIONS

  1. Preheat Oven to 400º F. Line a Loaf pan with cooking spray.

  2. In a medium bowl, mix almond flour, erythritol, and baking powder.

  3. In a large bowl, mix eggs, cream cheese, heavy whipping cream, butter, vanilla, and lemon zest with a hand mixer.

  4. Pour flour mixture into the egg mixture and beat with a hand mixer until thoroughly incorporated.

  5. Pour the mixture into prepared loaf tin.

  6. Drop Blueberries into the top of the mixture, trying to keep them evenly distributed.

  7. Bake for 15 minutes, or until golden brown.

  8. Once it is cool, Slice it and top with a square of grass-fed butter.

SALTED CARAMEL PUDDING

  • Author: Corina Nielsen, Yield: 6 small servings

INGREDIENTS

For Pudding:

For Topping:

  • 1/2 cup heavy cream

  • 1 tablespoon powdered stevia

  • 1-ounce toasted coconut (optional)

INSTRUCTIONS

  1. Melt butter in a medium saucepan over medium heat. Once melted, add monk fruit and set heat to low. Let lightly simmer for 5-7 minutes, stirring constantly, until mixture turns golden brown. Watch carefully to ensure it doesn’t burn.

  2. Whisk in 1/2 cup of heavy cream and continue to simmer on medium-low heat for 4-5 minutes. Slowly add milk and simmer for an additional 6 minutes. Turn heat off.  

  3. Whisk Perfect Keto Salted Caramel Base into milk mixture. Adjust sweetness to taste if needed.

  4. Mix gelatin with water in a separate medium bowl and let sit for 1 minute.

  5. Turn burner back on and whisk gelatin mixture into pudding mixture. Whisk well until gelatin completely dissolves.

  6. Let pudding mixture cool for 10 minutes and then pour evenly into ramekins or small jars. Place in fridge to set up for 1 hour.

  7. While pudding is setting, pour 1/2 cup whipped cream into a mixer. Whip using whisk attachment for 2-3 minutes. Slowly add sweetener.

  8. Top pudding with whipped cream and sprinkle with toasted coconut if desired.

Nui cookies are delicious! My favorite flavor is Snickerdoodle. These cinnamon Snickerdoodle cookies only have 2 g net carbs in the whole sleeve and have 6g of Protein, making them an amazing and flavorful way to fight off afternoon hunger.

The folks at Nui recently shared this amazing Churro Truffle Recipe. It takes the Snickerdoodle Cookies and turns them into melt in your mouth fat bombs. These are perfect to eat after a long day!

RECIPE:
“Churro” Truffles
.
Yields: 6
.
Ingredients:
Nui Snickerdoodle Cookies
1 tbsp Cream Cheese
½ tsp MCT oil
1 tbsp Walnuts
.
Directions:
1. Grind cookies, set 1 tbsp aside.
2. Blend cream cheese, walnuts and MCT oil for 2 minutes or until mixture is smooth.
3. Scoop mixture and roll in ground Snickerdoodle cookies.
4. Chill for 1 hour and then enjoy.

KETO RECIPE: Chewy Chocolate Chip Cookies


Life is just better with cookies isn’t it?! Here’s my favorite recipe for puffy, chewy chocolate chip cookies. You can use any keto-friendly chocolate chip or chunks of super dark chocolate. You can also add nuts if you would like, chopped macadamia nuts are my favorite!

INGREDIENTS

·      ¼ cup unsalted butter

·      1 ¼ cups almond flour

·      ¼ tsp salt

·      ¼ cup erythritol

·      ¼ tsp cream of tartar

·      1 large eff

·      1 tsp vanilla extract

·      ¼ cup of sugar-free chocolate chips

DIRECTIONS

1.     Preheat oven to 350

2.     Line a baking sheet with parchment paper or silicone baking mat and set aside.

3.     In a saucepan or in the microwave, melt the butter. Place in a room-temperature container and let it set in the refrigerator for 10 minutes to cool down.

4.     In a large bowl, combine the almond flour, salt, erythritol, and cream of tartar. Stir to combine.

5.     In a small bowl, combine the egg, vanilla, and cooled butter. Whisk together.

6.     Pour the wet ingredients into the dry ingredients and combine everything together with a large spoon or rubber scraper, then fold in the chocolate chips.

7.     Scoop out 2 to 3” mounds of cookie dough and place on the prepared baking sheet. I like to flatten mine a bit.

8.     Bake the cookies for 10 to 12 minutes before transferring them to a cooling rack for an additional 15 minutes.

9.     These will make puffy chocolate chip cookies with a chewy center. I absolutely love them cold, so I generally store in the refrigerator.

KETO RECIPE: Gummies


Missing gummies in your life?! Make your own keto gummies! These are so super simple and you can have fun with them by using different molds and flavors of sugar free jello. I like to add heavy whipping cream, which is totally optional but adds a nice creaminess. Full fat coconut cream also works if you are dairy free. It makes 24 little bears and the whole batch only have 4g of total carbs.

INGREDIENTS

• 1/2 cup of HWC or coconut cream
• 1, .3oz box of sugar-free Jell-O, any flavor
• 1 tbsp unflavored gelatin

DIRECTIONS

1. In small saucepan, heat the HWC over medium heat
2. Add Jell-O and gelatin and stir until combined
3. Use a dropper to place mixture into silicone molds
4. Refrigerate for an hour, unmold the gummies

Store gummies in airtight container in the refrigerator. Enjoy!

KETO RECIPE: Keto Blueberry-Blackberry Ice Pops


Keto Blueberry-Blackberry Ice Pops

Blueberries are my favorite fruit, and blackberries are a close second. So I created a creamy, refreshing ice pop using both. The color of these ice pops is gorgeous! These also make yummy fat bombs!

INGREDIENTS

  • 6.5 oz of coconut cream from a can

    • You could also use 3/4 cup of heavy whipping cream or 3/4 cup of full fat coconut milk

  • 2 tsp of Swerve or 2 drops of liquid stevia

  • 1/2 tsp of vanilla extract

  • 1/4 cup mixed blueberries and blackberries (fresh or frozen)

DIRECTIONS

  1. In a food processor (or blender), mix together the coconut cream, sweetener, and vanilla.

  2. Add the mixed berries, and pulse just a few times so the blueberries retain their texture.

  3. Pour into ice pop molds and freeze for at least 2 hours before serving.
