KETO IN THE CITY FINDS: SUGAR FREE SHACK


It’s so exciting that there are starting to be more and more low carb, keto and sugar-free options in the real world! One day I was driving and saw the sign for Sugar Free Shack, which obviously caught my attention. I finally got a chance to stop in and I’m so glad I did. It’s a bakery that has a combination of low carb goodies and sugar free goodies.

The sugar free desserts aren’t as low carb as the others. They have a great macro call out list right on the counter so you can see exactly what ingredients they use and the net carb count for each. I ordered a variety of things from the low carb menu to try:

  • Churro Donut, 3 net carbs

  • Chocolate Donut, 4 net carbs

  • Vanilla Cupcake, 2-3 net carbs

  • Red Velvet Cupcake, 2-3 net carbs

  • Slice of Vanilla Cake, 5 net carbs

Then over the next few days I enjoyed all of these treats! My favorites were the slice of cake and the churro donut! They were so so good! It’s such a great experience to be able to walk into a bakery and know exactly what is in the food and feel confident in the ingredients and being able to order sweet treats that work for a ketogenic lifestyle. I feel super lucky that the Sugar Free Shack is only a few miles from my house, so I will definitely be stopping in on a regular basis.

My daughter who is not as strict about what she eats, tried the oatmeal cookie and was obsessed with them. She also tried the sugar free cupcake instead of the low carb and she loved it and has been asking for more ever since ;)

KETO RECIPE: Chewy Chocolate Chip Cookies


Life is just better with cookies isn’t it?! Here’s my favorite recipe for puffy, chewy chocolate chip cookies. You can use any keto-friendly chocolate chip or chunks of super dark chocolate. You can also add nuts if you would like, chopped macadamia nuts are my favorite!

INGREDIENTS

·      ¼ cup unsalted butter

·      1 ¼ cups almond flour

·      ¼ tsp salt

·      ¼ cup erythritol

·      ¼ tsp cream of tartar

·      1 large eff

·      1 tsp vanilla extract

·      ¼ cup of sugar-free chocolate chips

DIRECTIONS

1.     Preheat oven to 350

2.     Line a baking sheet with parchment paper or silicone baking mat and set aside.

3.     In a saucepan or in the microwave, melt the butter. Place in a room-temperature container and let it set in the refrigerator for 10 minutes to cool down.

4.     In a large bowl, combine the almond flour, salt, erythritol, and cream of tartar. Stir to combine.

5.     In a small bowl, combine the egg, vanilla, and cooled butter. Whisk together.

6.     Pour the wet ingredients into the dry ingredients and combine everything together with a large spoon or rubber scraper, then fold in the chocolate chips.

7.     Scoop out 2 to 3” mounds of cookie dough and place on the prepared baking sheet. I like to flatten mine a bit.

8.     Bake the cookies for 10 to 12 minutes before transferring them to a cooling rack for an additional 15 minutes.

9.     These will make puffy chocolate chip cookies with a chewy center. I absolutely love them cold, so I generally store in the refrigerator.

KETO RECIPE: Gummies


Missing gummies in your life?! Make your own keto gummies! These are so super simple and you can have fun with them by using different molds and flavors of sugar free jello. I like to add heavy whipping cream, which is totally optional but adds a nice creaminess. Full fat coconut cream also works if you are dairy free. It makes 24 little bears and the whole batch only have 4g of total carbs.

INGREDIENTS

• 1/2 cup of HWC or coconut cream
• 1, .3oz box of sugar-free Jell-O, any flavor
• 1 tbsp unflavored gelatin

DIRECTIONS

1. In small saucepan, heat the HWC over medium heat
2. Add Jell-O and gelatin and stir until combined
3. Use a dropper to place mixture into silicone molds
4. Refrigerate for an hour, unmold the gummies

Store gummies in airtight container in the refrigerator. Enjoy!

KETO RECIPE: Keto Blueberry-Blackberry Ice Pops


Keto Blueberry-Blackberry Ice Pops

Blueberries are my favorite fruit, and blackberries are a close second. So I created a creamy, refreshing ice pop using both. The color of these ice pops is gorgeous! These also make yummy fat bombs!

INGREDIENTS

  • 6.5 oz of coconut cream from a can

    • You could also use 3/4 cup of heavy whipping cream or 3/4 cup of full fat coconut milk

  • 2 tsp of Swerve or 2 drops of liquid stevia

  • 1/2 tsp of vanilla extract

  • 1/4 cup mixed blueberries and blackberries (fresh or frozen)

DIRECTIONS

  1. In a food processor (or blender), mix together the coconut cream, sweetener, and vanilla.

  2. Add the mixed berries, and pulse just a few times so the blueberries retain their texture.

  3. Pour into ice pop molds and freeze for at least 2 hours before serving.

KETO BUTTER PECAN COOKIES

“These cookies are better than “normal” cookies”

I am a BIG fan of keto baked goods as an easy way to keep it keto over the holidays and gatherings without feeling like you’re missing anything. There are a bunch of great brands out there that offer keto friendly cookies and I enjoy all of them! I also have recipes for cookies in my cookbooks if you want to bake your own. BUT sometimes you just want someone else to do the dirty work and bake you up some delicious, homemade, low carb treats. My go-to person for that is Jackque Olmos better known as @jackque_bakes on Instagram. I have never met Jackque (and I need to make that happen asap), but I have met her treats and OMG! Her blueberry loaf is amazing, her bagels are great, but you guys…. THESE BUTTER PECAN COOKIES ARE INSANE!

KETO RECIPE: STRAWBERRY CHEESECAKE MOUSSE

I love this super easy dessert that any dairy eating, cheesecake loving person will devour! It takes 5 minutes to make and can easily be customized to include your favorite flavors! 

This is one of my favorite recipes from my cookbook, The Easy 5-Ingredient Ketogenic Diet Cookbook.

KETO RECIPE: STRAWBERRY CHEESECAKE MOUSSE by Jen Fisch via Keto In The City

INGREDIENTS

  • 4 ounces of Cream Cheese 
  • 1 tablespoon of heavy whipping cream
    •  This can be unsweetened full fat Coconut Milk, Almond Milk, or Heavy Whipping Cream.  Whatever you have in the house is fine! Today I used Califia Farms Coconut Almond Milk, but usually I use Heavy Whipping Cream. 
  • 1 scoop of Perfect Keto MCT Oil Powder 
    • This ingredient is optional, but justs boosts up the healthy fats even more and is flavorless. 
  • 1 teaspoon of Swerve natural sweetener or 1 drop of liquid stevia
  • 1 tsp of Vanilla Extract
  • 4 Strawberries
    • You could also use a handful of blackberries or raspberries instead

DIRECTIONS

  1. Break up the cream cheese block into smaller pieces so that it is evenly distributed around the blade. Add the cream, sweetener, vanilla, and MCT Powder. 
  2. Mix together on high. I usually stop and stir twice with a small rubber scraper to make sure everything is mixed well. 
  3. Slice up 4 strawberries and place them in the food processor with the cheesecake mixture. Again mix until combined and use rubber scraper to incorporate everything. 
  4. Divide strawberry cheesecake mixture between 2  vessels.  Then I like to slice up additional strawberries and put them on top.
  5. You can eat this right away or chill it for an hour before eating, it is delicious either way! 

INGREDIENT TIP- Set the cream cheese out on the counter for 20 minutes or so working with it. If the mixture still seems thick, mix in a little more cream to help it incorporate. 

You can customize this dessert in so many ways! I have added lemon zest in the past for nice freshness!
