KETO RECIPE: Pancake Cake Bites


ATTENTION: I might have a new favorite way to eat my famous Pancake Cake!

As most of you know, we are obsessed with Keto Pancakes at our house. Recently I came up with the idea to use my Pancake Cake recipe from my Easy 5-Ingredient Ketogenic Diet Cookbook and bake them in one of those brownie pans that makes the individual brownies so that each one has a perfect crust around it. It worked perfectly! It makes these beautiful, individual servings of pancake bites and it also makes it super easy to include add-ins like berries, keto friendly chocolate chips or anything else you can imagine!

You’ll definitely want to make these for your next brunch or big family breakfast because each kid could get their own unique flavor!

Look how beautiful these bite sized morsels turned out! These brownie pans also make perfect little cakes, they rise up and bake nicely all the way through.

KETO RECIPE: Pancake Cake

INGREDIENTS

  • 4 tablespoons of melted butter, cooled slightly

  • 8 eggs

  • 8 ounces cream cheese, room temperature

  • 2-4 teaspoons liquid stevia (adjust to taste)

  • 3 teaspoons baking powder

  • 1⁄2 cup coconut flour

  • 2 tsp vanilla extract

Optional Add-ins

  • Berries: Blueberries, blackberries, raspberries, diced strawberries

  • Keto-friendly chocolate chips or dark chocolate chunks, nuts, Choc Zero syrup

DIRECTIONS

  1. Preheat the oven to 425°F. Grease the brownie tin well.

  2. Blend the eggs, cream cheese, coconut flour, baking powder and stevia until smooth. Add the cooled melted butter to the batter.

  3. Pour the batter evenly into the pan.

  4. Add Blueberries or Chocolate Chips

  5. Bake for about 12-15 minutes, or until a paring knife stuck into comes out clean.

  6. Place the cake on a cooling rack, and melt a few more tablespoons of butter on top if you wish.

  7. Serve up with some Choc Zero Syrup and Butter.

KETO RECIPE: Chopped Greek Salad

Every year as spring comes to the west coast, I ditch my sweaters and soup and start craving SALADS!

Salads are a great option for eating out on Keto. I can find a low carb salad option at any restaurant. I often add grilled salmon for some healthy protein. 

But sometimes when the weather is warm, I like to make Salads at home. I throw a bunch of ingredients into a giant bowl and enjoy it on my patio, or better yet, in my Jacuzzi. I especially love this Chopped Greek Salad recipe. The best thing about it is that you can customize it to include all of your favorite things. I love adding salami, pepperoni, and avocado.

Keto Chopped Greek Salad

INGREDIENTS:

  • 2 cups chopped romaine

  • 1/2 cup halved grape tomatoes

  • 1/4 cup sliced black olives (I like Kalamata)

  • 1/4 cup feta cheese crumbles

  • 2 tablespoons vinaigrette salad dressing (I use Primal Kitchen Greek Vinaigrette)

  • Pink slat

  • Ground Black Pepper

  • 1 tablespoon olive oil

DIRECTIONS:

  1. In a large bowl, combine romaine, olives, tomatoes, feta, and dressing.

  2. Sprinkle pink salt and pepper. Drizzle with olive oil and toss to combine.

  3. Divide between two bowls and serve.

Variations: Make this recipe your own. You can replace the feta cheese with goat cheese. Add red onion or chopped cucumbers. You can even top the salad with finely chopped Genoa salami or pepperoni.

Calories: 202, Total Fat: 19g, Carbs: 4g, Fiber: 2g, Net Carbs: 3g, Protein: 4g

All Things Keto Pancakes

When I say that I have made Keto Pancakes 1 million times, I’m only slightly exaggerating. My daughter loves this recipe and after heeding her request for these pancakes countless times, I think its safe to say we are now experts on Keto Pancakes. We even make this recipe on Christmas Morning and decorate them like reindeers.

It all started with one Recipe, Cream Cheese and Coconut Flour Pancakes. I started experimenting with Keto Pancakes back in the beginning of 2017 and I liked this recipe so much I included it in my first cookbook, The Easy 5-Ingredient Ketogenic Diet Cookbook.

This cream cheese and coconut flour recipe makes soft and fluffy pancakes that taste and feel almost exactly like the real thing. I top them with Vital Farms grass fed butter and sugar-free maple syrup. They have 18g of protein in each serving and only 8g of net carbs, meaning you can fit these pancakes nicely into your macros with out having to worry.

After solidifying this basic recipe, I started to play with different variations. I made a Pancake Cake that can be baked in the oven instead of on the griddle. I added cinnamon and vanilla extract, chocolate chips (KNOW Foods has some great low-carb ones), and different Sugar Free Syrups from Choc Zero. They have more flavors of sugar free syrups than you could even imagine, everything from Maple Pecan to Peppermint.

I even tried out Bulletproof Hot Chocolate in this Chocolate Pancake Recipe and I have to say, It was delicious!

For my second book, The Big Book of Keto, I settled on a Pumpkin Pancakes Recipe. To this day, It is still my favorite way to enjoy Keto Pancakes. There is something so warm and comforting about the taste of Pumpkin. I love adding Choc Zero’s Caramel Syrup to this recipe. (Is your mouth watering yet? I know mine is!)

Also included in The Big Book of Keto is this Blueberry-Lemon Cake.

This recipe is kind of a twist on my Pancake Cake recipe from my first book but with lemon zest and blueberries. I LOVE blueberries and If you are a big lemon lover you can add even more zest! You can even make mini cakes! Perfect for dessert, breakfast or brunch!

This Keto Pancake batter can also make waffles. One of the things I love about waffles, besides their perfect butter holding ability, is that you can keep left overs. Pancakes don’t reheat well, but waffles do. You can even freeze them and then reheat them in the toaster. If you are really in the mood to get crazy, try making a grilled cheese sandwich with left over keto waffles. I promise you won’t regret it.

KETO RECIPE: Keto Blueberry-Blackberry Ice Pops


Keto Blueberry-Blackberry Ice Pops

Blueberries are my favorite fruit, and blackberries are a close second. So I created a creamy, refreshing ice pop using both. The color of these ice pops is gorgeous! These also make yummy fat bombs!

INGREDIENTS

  • 6.5 oz of coconut cream from a can

    • You could also use 3/4 cup of heavy whipping cream or 3/4 cup of full fat coconut milk

  • 2 tsp of Swerve or 2 drops of liquid stevia

  • 1/2 tsp of vanilla extract

  • 1/4 cup mixed blueberries and blackberries (fresh or frozen)

DIRECTIONS

  1. In a food processor (or blender), mix together the coconut cream, sweetener, and vanilla.

  2. Add the mixed berries, and pulse just a few times so the blueberries retain their texture.

  3. Pour into ice pop molds and freeze for at least 2 hours before serving.

1 Year Ago Today: The Easy 5-Ingredient Ketogenic Diet Cookbook Released!


I can’t believe it has been a year! 2018 was a big year for me for so many reasons, but it all started on January 9th, 2018 when my very first cookbook, The Easy 5-Ingredient Ketogenic Diet Cookbook, released from Amazon and shipped out to the world!

I remember being so excited and also terrified, but mostly excited. I really never imagined anyone would buy it other than maybe my friends and family. I remember when it sold 1,000 and then 10,000 and I was AMAZED! Well, one year later it has sold 200,000 copies and to say I am stunned would be an incredible understatement.

I never set out to be a cookbook author, a blogger or an Instagrammer. I was and still am, just a busy mom who needed to find some relief from auto-immune issues, and I felt like the food I chose to put in my body could play a role in helping me feel better. For me, the solution I chose was keto and it turned out to be one of the best decisions I ever made. One month after starting keto I started @ketointhecity_ so that people on my personal page wouldn’t have to look at pictures of endless avocados;) Then eventually it was annoying trying to write recipes in my captions or in comments, so I started a blog, then one day a year later or so a publisher called me and asked me to write a cookbook. It has been a fun and crazy keto journey!

I love sharing my life and my food with all of you. It turns out you guys like the food too and I am so happy and feel so grateful that I can help make anyone’s keto journey just a little easier and a little more delicious. So thank you, thank you, thank you from the bottom of my heart for always supporting me and supporting my projects!

KETO RECIPE: Creamy Slow-Cooker Chicken


Creamy Slow-Cooker Chicken

A creamy slow-cooker meal is perfect for those chilly days. You can make this dish very quickly and then enjoy the aromas for the next 4 hours while it cooks. The fresh spinach added toward the end of the cooking time adds beautiful color and freshness.

INGREDIENTS

  • 1 tbsp of ghee

  • 2 boneless skinless chicken breasts

  • 1 cup of alfredo sauce

  • 1/4 cup of chopped sun dried tomatoes

  • 1/4 cup grated parmesan cheese

  • 2 cups of fresh spinach

  • Pink salt and pepper

DIRECTIONS

  1. In a medium skillet over medium-high heat, melt the ghee. Add the chicken and cook, about 4 minutes on each side, until brown.

  2. With the crock insert in place, transfer the chicken to the slow cooker. Set the slow cooker to low.

  3. In a small bowl, mix to combine the Alfredo sauce, sun-dried tomatoes, and Parmesan cheese, and season the pink salt and pepper. Pour the sauce over the chicken.

  4. Cover and cook on low for 4 hours, or until the chicken is cooked through.

  5. Add the fresh spinach. Cover and cook for 5 minutes more, until the spinach is slightly wilted, and serve.

Substitution tip: You can replace the chicken with pork chops and follow the same instructions.

KETO RECIPE: Festive Reindeer (and Santa) Pancakes!

One of my favorite parts about Christmas is making these festive pancakes! I started making them a few years ago and they have now become a family tradition right after we finish opening Santa presents. I make non-keto pancakes for my parents and my keto pancakes for Kaia and I.

I use my Cream Cheese & Coconut Flour Pancake recipe and then let the bacon, berries and whipped cream do the rest of the work!

You can let everyone make their own creations or you can do the honors for everyone, just make sure the pancakes have a little time to cool or your whipped cream will just melt right off!

KETO RECIPE: Mississippi Pot Roast


This is by far one of the easiest dishes to make! I love a slow cooker meal on a busy day. I throw it all in before I go to work and by the time I get home the house smells amazing and the beef shreds in seconds.

 

INGREDIENTS

  • 2lb Chuck Roast

  • 8oz of butter

  • 1 packet of Dry Ranch Dressing

  • 1 packet of Aus Jus Gravy Mix

  • 1 jar of whole Peperoncini

DIRECTIONS

  1. Put the slow cooker on low.

  2. Season the meat with salt and pepper and place it on the bottom of the slow cooker. 

  3. Pour the packets of dry ranch dressing and gravy mix over the meat. 

  4. Place the sticks of butter on top of the meat and seasoning mixes. 

  5. Add the peperonicinis (I don't add the liquid, just the peppers) all around the butter on top of the meat. There will be plenty of liquid from the meat and the butter, no water or broth is needed. 

  6. Let it cook for 8 hours on low. 

  7. Shred beef with 2 forks.

  8. Place shredded beef and peperoncinis in serving dish. Buttery liquid can be used as a gravy, I pour it into a separate container. 



Mississippi pot roast pairs great with cauliflower rice or mashed cauliflower. Sometimes I also put it inside a low carb tortilla like a Mississippi Pot Roast burrito- it is super messy, but yummy!

KETO RECIPE: Cozy 5 Ingredient Keto Soups


It is officially soup season!

Not much is better than a cozy bowl of delicious soup. I have a variety of keto friendly soup recipes in my 2 cookbooks. All are super easy and will please the whole family.

BROCCOLI-CHEESE SOUP

A fat-filled combination of butter, broccoli, heavy whipping cream, chicken broth, and cheddar make this soup filling and delicious. Great for a night when you feel like going meatless, but you could also add crumbled bacon on top if you want some added protein. The easy to find ingredients can be kept on hand anytime for a quick dinner. 4g of net carbs per bowl.

TACO SOUP

This soup has a nice kick from taco seasoning and seasoned tomatoes. The base of the soup is rich and creamy with a mixture of ground beef, beef bone broth and and cream cheese. 5g net carbs per bowl.
